you forgott the first chef who had main influence on cooking and book wrting: alessandro filippini, also from the same origin as founders (airolo/mairengo) switzerland... the epicurean was written by a later chef "ranhofer" of delmonicos. a more important , you'll learn is the 1880s edited filippini too. the sea captain came out of founder-times : pietro and giovanni delmonico went (pietro) to sea...and joined only the 1820 to found in NY first restaurant (former pasta &wine business)....!! check ...
