Creamy demikat, the soup is very well known mainly in Slovakia. There are more ways to prepare it, but the basis of this soup is always the same. And this quality Slovak bryndza! It is a real gem of Slovak cuisine, and I literally loved this creamy soup. To the finished demikat you can add garlic, butter, smoked cheese, fried bacon, boiled potatoes, mushrooms or tarhoňu (egg barley) to taste. Such a demikat is called "mohawk" and calmly replaces the main dish with its richness. I roasted bread on the pork fat and added sour cream. The origin of the name "demikat" is unknown.
