My dads birthday is on Tuesday, and with him being a newly diagnosed diabetic I wanted to see if I could find a cake recipe that he would like. I made this today and he loved it! He checked his blood sugar afterward and his levels remained stable. This cake is amazing and a life saver. Thank you for this recipe Charlie!

I make a version of this that comes from Spain. Because of the eggs and the butter it truly is moist and delicious. Mine has sugar in it though so I will wait and see what Charlie is using here

Your lemon cake looks good Charlie! Your recipe is a great sweet treat for diabetics and those on a low carb or keto diet. Monk fruit sweetener could be used also. It's a 1:1 replacement for sugar.

I’m going to make this delicious diabetic poundcake. My husband and I moved to Las Vegas August 9th of last year we live a beautiful senior citizen apartment. Hi Charlie. Thank you so much for this recipe. I use Almond flour for my baking. I don't bake with flour. Since Almond flour is made from almonds, it does nothing to raise sugar. I love the ingredients you are using, no sugar, healthy ingredients. Stay safe and I loook forward to your next healthy idea.
