The pasta salad with curry sauce with lots of crunchy vegetables not only tastes great, this salad is quick and easy to prepare and looks great too. This pasta salad as a summer salad is also a delicious and filling side dish for your lunch or a full dinner.
Ingredients for the curry pasta salad
300 g pasta
5 gherkins (approx. 180 g)
250 g carrots
1 can of corn
1 bell pepper
100 ml milk (or vegan alternative, I use almond milk)
200 ml oil
2 tbsp balsamic vinegar, light
1 tbsp mustard, medium hot
1 tsp honey or agave syrup
1.5 tsp curry
1 tsp paprika, sweet
Salt and pepper to taste
Preparation of the pasta salad with homemade curry sauce
1. Cook the pasta according to the instructions on the packet, drain and let cool slightly.
2. Wash and clean the peppers and cut into small cubes.
3. Cut the cucumbers into small cubes or into quarters or half rings.
4. Finely grate the carrots. Drain the canned corn.
5. Mix the (olive) oil, (almond, soy, oat or cow) milk, vinegar, honey, mustard, salt and pepper well.
6. Mix all ingredients well and leave to steep for at least 30 minutes.
