Dill Dinner Rolls are such a delicious twist on a regular roll. If you've never tried them, you really should. The Dill isn't overpowering, and the herb just gives it such a nice light flavor. There is cottage cheese in these rolls, which I know sounds like I'm trying to put protein or be trendy but this is an old recipe and it gives a tender richness and a level of extra moisture to these rolls. It's absolutely delicious, and even if it looks unappealing in the mixing process, you would never know there was cottage cheese in them. You can't see or taste it once it's baked. The onion soup mix gives a hint of a savory onion flavor, which just adds to the delight of these Dinner Rolls. They are amazing as a dinner roll, or they make a fantastic sandwich. I would even use these as a hamburger bun.
Dill Rolls:
2 cups cottage cheese
2 tablespoons butter
Put in a saucepan, heat until the butter is melted
1/2 cup warm water
2 packages of active dry yeast ( =1 tablespoon + 1 1/2 teaspoons)
2 eggs
1/4 cup sugar
2 tablespoons onion soup mix
2 tablespoons fresh dill
2 teaspoons salt
41/2 -6 cups flour
(I used 4 cups to start and then added about another 1 1/2 cups while mixing, bringing my total up to 5 1/2 cups)
Proof 1 hour, form in o 2 -3 portions, proof 45 minutes more. Bake at 350° F for 20-23 minutes.
