Phatthalung (พัทลุง), Thailand - Welcome to Phatthalung (พัทลุง) is southern Thailand and today we’re going in search of a rare Thai dish made with rattan shoots and fermented fish!
Trang Moo Yang (ตรังหมูย่าง) maps.app.goo.gl/36A12rWX8yoXC... - But first, in order to get to Phatthalung, we needed to fly into Trang which is a bigger city with an airport. After landing we got in our car and then had to stop for breakfast. Trang is very well known for their local Thai Chinese style of dim sum and trang moo yang, roast pig.
บ้านต้นไม้ ร้อยหวันนอนฟังสายน้ำ - maps.app.goo.gl/XReo5nwRZQtEx... - We then drove to Phatthalung to meet up with my good friends P’Ju (พี่จู) and P’Nong (พี่นงค์). From there we went straight into the jungle to harvest the spiky rattan shoots in order to make the curry. After getting the rattan shoots we headed to their pristine jungle camp where they cooked Thailand’s hidden dish of southern Thailand; Fish Curry with Rattan Shoots (แกงน้ำเคยยอดหวาย). It’s a dish that you won’t find common anymore although P’Ju was mentioning that it’s an old dish that used to be prepared during festivals. It was outstanding!
Phatthalung (พัทลุง) town - After spending the night at P’Ju’s homestay we then drove into Phatthalung town and on to Pa Ngiao Restaurant (ร้านอาหารป้าเงี้ยว ลำปำ) for some river prawns tom yum and freshwater seafood!

I am from Bohol Philippines and we have a lot of common dishes with southern Thailand. I remembered my mother's story about WW2 days when the Japanese invaded our country and my mom's family goes into the jungle to hide. She said that my grandpa used to harvest rattan shoots for food they called "uway". Also their source of light in the forest during night is a type of mushroom called amag.

Nature is extravagant. This is what this tour has taught me. Firstly the food..we have become fixated with artificial flavours etc however, to witness food from ground to plate in its natural form is sensational. All these ingredients look brighter, fresher, cleaner and tastier. It doesnt take a lot to appreciate food from different cultures, it just needs an open mind and respect. Mark has done something spectacular here...he highlighted the immense beauty and simplicity of rural life in Thailand which I admit, I knew nothing of. I was drawn to plush foliage, the untouched untarnished unparalleled natural beauty of Southern Thailand. I watched this episode 4 times just to soak in the immense beauty, very often drifting into an imaginative world that placed me on that hammock right across the river soaking in the fresh air and beautiful rhythmic flowing of water. Mark...u have represented Thailand well..congratulations !!!

This may have been the best of the series! But I think I will go back and rewatch them all because I loved each video. These videos (along with all your others) have really inspired me to learn and practice more Thai cooking concepts, at the same time as making me and my lady miss Thailand in a way that can’t be explained. Curry is the most complex genre among all foods. I just finished my usual HK style twice cooked curry beef, enjoying it immensely. Thank you for exploring curry's less known variations!

My wife is from Udon Thani Province and sells a soup she makes from rattan (hway) at her local market. It's a bitter soup that Isan people love! ;-)
