Cloves - 2
For Masala paste

Cinnamon - 2 inches
Cloves - 10
Cumin seeds - 2 tbsp
Black pepper - 2 tsp
Coriander seeds - 2 tbsp
Star anise - 2
Mace - 1 flower
Fennel seeds - 2 tbsp
Stone flower - 2 tbsp
Dry red chillies - 4
Bay leaves - 3
Green chillies - (7-8)
Onions - 200 gms (2 medium size)
Seeraga samba rice - 1 Kg (4 glasses)
(Chitti muthyalu rice)
Soak rice for 1 hour
Preparation of Dindigul Mutton Biryani

Oil - 4 tbsp
Chopped Onions - 1 cup (200 gms)
Ginger & Garlic paste - 3 tbsp
Turmeric powder - 1 tsp
Nutmeg powder - 1 tsp
Thalappakatti Masala paste
Salt
Red chilli powder - 3 tbsp
Chopped tomatoes - 1 cup (200gms)
Boiled mutton
Fresh lemon juice - 1
Curd - 1 cup (100gms)
Coriander leaves - 1 cup
Mint leaves - 1 cup
Mutton stock - 2 glasses
Boiled water - 6 glasses
1 hour soaked Seeraga samba rice (Chitti muthyalu rice)
Ghee - 2 tbsp
