Hopefully you will not get tired of hearing this, but Adam's video, led me to yours. Hearing you talk about there not being enough salt in the cheesesteak from Dalessandro's, I recently watched a video posted by Bon Appetite on their YT Channel. Some guy did one of those, work here for a day vids, and on more than one occasion during the video, I assume one of the owners said they did not season the meat at all, which included no salt. All they did to season the onions was to add some paprika. So your assessment of there not being enough salt sounds pretty accurate based on what the owner said they did not use.

I remember going through the heart when I was a kid in the sixties, lol 😂I always enjoyed going to the Franklin Institute and yes I remembered the train moving with all the sights and sounds of the train going on!
