I made a flat white with this method and I’m legitimately blown away. It was so tasty. My Baratza Encore at the lowest setting was actually too fine. I pushed so hard and nothing came out, I ended up using #7 on the Encore.

I love how you touch on the creme. Or however you spell it. But it honestly is a traditional espresso aspect so I like the double filter aspect and your understanding that espresso machines require specific pressure aspects. So with this, thank you. Just got an aeropress from a goodwill for 2 dollars and it will be out to really good use

BINGO! I recently purchased a AeroPress and have been trying to make a short flat white at home and played with your recipe a couple of times and finally hit the jackpot. Here is what worked for me. Time More Chestnut Nano @ 10 clicks 28-29 Gm Peets Major Dickason's Blend (dark roast) measured using a scale 60 gram water at ~ 90C - measured using scale 150 ml whole milk in Bodum milk frother (or use french press to do the same thing) frothed and heated to 60-70C in microwave Delicious! Thank you for this great recipe. And by the way I also have the Hand Ground grinder and made it the first time using 1 click and exact recipe, but it was nowhere near as good. ☕

I just tried this technique and made cafe-grade espresso - I actually got of crema around the edges using beans roasted a month ago. It tasted like dark cherrry liquid with very rich mouthfeel. I'd say its VERY IMPORTANT to use dark roast. I tried at least 4 times using medium roast and every time it was underextracted. Switched to dark roast and BOOM hit the jackpot. Grind size was 10 clicks on comandante c40 mk3.

Im getting very satisfying results with just a single filter, 65g of water, 18g of roughly ~400micron coffee (14 clicks on the Commandante), 2 minute steep time, and brewed with the inverted method. With a somewhat hard press on the plunger, im getting a pretty good amount of crema. Of course i had to at least try the recipe in this video, and thinking that the paper filter on top would prohibit any steeping, i skipped the steeping, and instead tried grinding at 8 clicks (the Commandante website recommends 10-15 clicks for espresso) for a quick infusion as i pushed the water through. The resulting coffee that was definitely strong enough, but i had no crema, and more importantly; i ended up with a somewhat sour brew, which very limited chocolate notes. I guess it may have gotten under extracted because i pushed too hard on the plunger, shortening brew time, but im so happy with the results i get with the recipe above that i dont really see the need to try anything else - except maybe experiment with a finer grind size to shorten the steeping process...

No way would that piece of paper on the coffee bed do anything. If anything, pressing quickly will cause the water to go around the edges and then into the edges of the coffee bed instead of through it, because that is the path of lease resistance. If you're going to do something like this, you need a way to create a complete seal so that water is forced as evenly as possible through the entirety of the coffee puck. You can see at the end that you got what looks like very diluted and watered down coffee with no foam whatsoever. Even the regular method of brewing with an aeropress will get you some fake crema or foam because it's actually pushing the water through the majority of the coffee puck.

Magic bullet will grind into a fine powder. Just tilt it in every direction to make sure you get all of the grounds.

I think my grinder is too powerful.... the plunger wont even go down, only halfway if i press with everything i got and when i let go it jumps right back up😳

alright, I had to remove the second filter and use my whole bodyweight to get the coffee out but it worked out in the end. pretty sure my grind was too fine for this setup. But! The coffee tastes like espresso so it definitely works! thank you so much for this!! 🧡

Great little video! I just got my Aeropress and am looking forward to experiment. Is there an electric grinder that grinds fine enough for this method - but still also coarse enough for French Press?

Are you sure the burrata encore doesn't grind find enough? I put it on the lowest setting and I couldn't even get any air to flow through the filters.

no idea what went wrong for me but my espresso was sour as hell, maybe just a bad coffee, no idea..

look into “underextraction vs overextraction”... sour taste indicates underextraction of the coffee, likely due to either too coarse a grind or not enough grams of coffee to water, which allows the water to travel through faster and not properly extract flavour from the coffee.

It all went smoothly until I tried to “press down quickly”. 😅 Perhaps my Capresso grinder was able to produce a much finer grind, but it took about a minute to get the plunger down using my body weight. Coffee came out great though! Thanks for the recipe. ☕️

Oh no! don't worry, this happened to me more times than I'd like to admit. And one time the pressure built up so much and I ended up with coffee all over kitchen walls and ceiling :D Just adjust your grind so its slightly more coarse, and you should be good. Every grinder is different

I could barely plunge it and ended up with like 10g of liquid. I used my Lido hand grinder that's grinds very fine. Probably work best with a coarser grind than a true espresso grind.

Great question! It's really only there to keep the grounds compressed, otherwise as soon as the water is poured the grounds will come apart and float around. With the coffee compressed, it is emulating what happens in an espresso machine. Thanks for the question!

It’s not espresso... the Aeropress is not capable of making it. No matter how you try your asking something from it that it never can do.
