Double Indemnity's "Fishhouse Punch" | How to Drink

On this episode of How to Drink, I’m taking a look at a single serving version of Philadelphia Fish House Punch from Double Indeminty, the great noir! If you’ve never seen Double Indemnity, or aren’t very familiar with Film Noir, you really owe it to yourself to see this one and to give the Fish House Punch a try. Hope you enjoy, cheers!
Double Indemnity is one of the defining films of the Film Noir genre, and if you're used to seeing Fred McMurray in his later Disney roles, this one might be a shocker. Fred plays an insurance salesmen trying to help a bored housewife pull off an insurance scam and murder her husband. The housewife here is of course Barbara Stanwyck in one of the all time great femme fatale roles. I say enough on camera so I won't rehash it all here, but I will say this: If you've never seen Double Indemnity, or aren't very familiar with Film Noir, you really owe it to yourself to see this one. I think you'll like it.
Fish House Punch Ingredients:
- .5 oz or 15 ml Lemon Juice
- .25 oz or 8 ml Lime Juice
- .5 oz or 15 ml Simple Syrup
- .75 oz or 45 ml Peach Brandy
- .75 oz or 45 ml Cognac
- .75 oz or 45 ml Jamaican Rum
- Shake Over Earl Grey Tea Cubes
- Garnish with Lime and Cherry
Order spirits I use here (Affiliate): bit.ly/H2Dspirits

This one is a long one, and if you're just here for the drink, it makes me sad, but it's at: 5:01 And there are typos in this... I was editing till 5am on this, which is a bad move. Nonetheless, .75 oz is 22 ml., not 45. Sorry guys! Also, I spill like crazy in this one, sorry!

Now that I think about it, it's kind of like a good cocktail: the booze is good on its own, but can be made much better with mix-ins :P

"When I went to film school..." Ah, that explains a lot. I'd totally listen to a film podcast by you just discussing old b&w classics, you seem to really know your shit. Huge film buff myself, but more of a '60s - now, start of the auteur director era. Haven't even seen Citizen Kane. :/

When you freeze impure ice or ice with any sort of support structure, it becomes extremely hard and also relatively more difficult to melt. There were some (admittedly slightly unrealistic) plans to make a giant ice ship during WWII by freezing ice with woodchips and other assorted materials in a massive ship-shaped block. You can do a similar thing today with cotton wool and actually create ice cubes that you can't really crack with a hammer.

Jeez, Greg, now that you mention it, both the style and content of this show would fit in quite nicely as an interstitial between films on TCM. You could do as you did in this episode, where you pick a film, give it a synopsis, than make a drink that's either in the flick or, as you did today, a smart homage to it. Yeah, you should totally pitch this to TCM.

So hey, freezing the earl grey for shaking. I can think of two reasons for it being hard to get out of the molds, but I could be VERY wrong. I've got some silicone molds and a couple hard plastic sphere molds that I might give a test myself and see what I find out. BUT! 1) If the tea was sweetened at all, that could be a good reason for sticking, but that's kind of a given with freezing sweetened drinks, it's like popsicles. 2) It MIGHT be due to uneven freezing. With like, bagged teas, they tend to have super fine particulates that get out of the bag sometimes. Like, if you've ever had a cup of herbal tea or something, and you look in it after taking the teabag out, sometimes there's a buncha jazz in the bottom of the cup. It's like how filtered water is better for ice than tap water because of the minerals and additives making it freeze weird. It sounds like, PROBABLY too much work? But maybe putting the finished tea through a cheese cloth? Anyway, good episode! I love earl grey so I might have to give this one a try.
@howtodrink
@howtodrink 6 лет назад
It’s almost certainly particulate “dust” from the tea being in the ice, turning it into something like Pycrete

Greg changes things. He makes Iced Tea into Ice Tea. BRILLIANT. The old movies, film noir (black, noir means) had more sensuality and sexuality in their pinky WITHOUT TAKING OFF THEIR CLOTHES! Why? Because 90% of sensuality and sexuality is in the mind, therefore in dialogue. The old film directors knew it. They exuded the tactile without even touching! And Greg does it with his drink craftsmanship and his speaking about it. Another work of art. Thanks, Greg.

I’m a film noir buff and a Philadelphia Fish House punch admirer. I was hoping you would have delved into the rich history of this drink. It was first concocted by the Schuylkill Fishing Company, the oldest continuously active social club in the US. (Founded in 1732). George Washington was a member of the club, and he would frequently drop by for meetings and imbibe the punch. Thanks for the video.

Idea for an alternative way to get tea into the drink: black tea-infused simple syrup.

This is a good way to go too!

What about dry shaking and pouring it over crushed tea ice? I imagine that'd lead to way more dilution, but also more tea flavor (if it's supposed to be a focal point)

I really got enough earl grey flavor here but it could get pushed harder I suppose. Don’t want to overpower the peach though

Fred MacMurray also famous for My Three Sons. I hope you have seen him as a sleazy character in another Billy Wilder flick The Apartment. Great movie and one I need to own. I should also try this drink sometime too!

He’s in the apartment? Why do I have no memory of his character there?!

Always love your videos and this is a great classic cocktail. I’ve always wanted to ask, do you mean to spill so much spirit out of the jigger and onto the side of the tin?

First video I see on this channel. Must say I am impressed, Nice intro and I loved the use of old footage. Will try the frozen tea idea my self some time soon. :)

Greg have you ever thought about doing a separate channel or episode where you just talk about old classic movies, scene break downs, critiques, etc (basically what you love, and the history behind the movie and characters) while you drink a cocktail from that movie? I know you already kinda do it here but it would be awesome if you did a full episode like that. You can call it "How To Drink: After Hours" or something

I go back and forth on the second channel thing, truth is I don't have enough time to run ONE channel right now, the idea of opening up a second one seems impossible to me.

Well that's a shame, and understandable. I already enjoy the movies you bring up so thanks for making your episodes more than just a cocktail video.
