It is possible to make 18 gr double shot espresso with the 54 mm portafilter of Sage Barista Express. You know that I set the inner burr setting to level 5 in my previous videos.

Since then, I alternate between 3 and 4 grind levels with each use. Level 3 grind is sometimes fine and the time reaches up to 35 seconds. Level 4 grinding allows you to yield 36 g in 25 -27 seconds as you can see in this video. Both results are good. You can get results between bitter-sweet with level 3 grinding, and sour-sweet with level 4 grinding.
In the video I controlled the espresso flow up to the 20th second with manual pre-infusion. For those who do not know the subject, I show you how to do it in this video.

After the 20th second, the pressure works between 10 - 12 bar. Pressure greater than 9 bar causes channeling. To avoid this, you can make espresso in a fully manual pre-infusion mode with a level 3 grind. As the ground coffee sizes get smaller, the pressure will increase. With the pre-infusion mode, the flow starts after 10 seconds. You can continue with 9 bar pressure and stop when you reach 36g yield. Enjoy watching.

I can see some channeling (small squirts of water) while you pull..try tamping it harder or finer grounds.

I didn't want a finer grind because it tastes more bitter. I could have tampered with it a little better. Thank you for your recommendation.

All that preparation and it's not even perfect. Try to work in a bar for a while and prepare 20 espressos every ten minutes and each one of them must be perfect. Maybe you don't even like coffee, but reveling in the details is all you want. Hipsters ;-)

"reveling in the details" is actually exactly what I'm doing. I did not choose to be a barista in my working life. It's a hobby, a few moments of enjoyment, and I'm not great at it. 🙂
