We left the coravin needle in the cork for too long and the cork didn’t seal properly oxidizing the wine. Also argon is heavier than alcohol so it mutes the alcohol. After we coravin it takes longer to decant as well and you lose that sharp alcohol on the nose.

I agree that special occasions deserve a special wine. By drinking the best stuff everyday, it loses its wow factor and becomes baseline
