khatkhate:
khatkhate is the traditional food of Goa. We can say it is Goan vegetable soup with spice. Our ancestor use vegetables which are available in their own garden or some of them are from nearby farms or forest, especially they used root vegetable which gives more nutrition value to food. In the different regions and as per different community-style there are different varieties of khatkhate. Without garlic and onion khatkhate is called veg khatkhate. It is made during mostly Hindu festivals times. In this episode, we made Khatkhate with what is available in our garden and nearby farm.

Ingredient :
1) Madi (taro root or colocasia roots )
2) Shenga ( Drum sticks )
3) Kuala ( Raw jack fruit )
4) Raw banana
5) kate kanga ( Asiatic Yam, Chinese yam or Lesser yam )
6) Suran ( Elephant foot Yam )
7) Karane (Air Potato Yam)
method :
1) Soak kabuli chana overnight or four-five hours or any other grain according to your test
.
2) Before taking vegetable to wash, one should divide it into two parts take Madi, Suran, Karane on one side. Before cleaning it apply kokam or any oil on your hands. Specially Madi can cause terrible itching. Do not put water on this root vegetable or on hand while cutting. It gives more itching sensation if u use water before or while cutting. After cutting all this vegetables put it in kokam water for some time.
3) Rest of all vegetable clean and keep onside
4) Boil water as per the quantity of veggies. Do not use excess water.
5) For grinding masala, first dry roast Dry coriander, red chili. Fry garlic, onion and grated coconut in coconut oil. Add Turmeric and Garam masala while grinding masala.
6) First, add Kabuli chana in boiling water.
7) Add 1st part of vegetables, because it takes more time to boil. while boiling it add 3- 4 dry kokum, so it will not give itchy sensation to mouth and throat.
8) Add all vegetables and let it cook, whichever is a soft vegetable we should keep it last to cook because it gets melt in the cooking process. Vegetables should boil in such a way that one should get it to eat as in the proper shape of it. If it is cooked more, it gets mixed with gravy and khatkhate tastes different.
9) Once it is cook add grind masala in it let it cook for 5 minuts, Add salt and jaggery or triphal (jaggery or triphal is optional) mix well. At last, we give tempering of coconut oil, mustard seed, and curry leaves) add green coriander mix well and serve.
