There's been a few comments about the quantity of cure that I used. This is the specific one, other makers may vary: www.ebay.co.uk/itm/3839041920... If in doubt, do what the manufacturer of the product you are using recommends. This is not sodium nitrate but a commercial curing salt with less than 1% nitrite

You might never have thought of making your own bacon, but it's very easy to do and home-made bacon is fantastic. In this video I show you the 2 main types of British bacon - streaky bacon made from pork belly, and back bacon made from pork loin. This is a dry-cured process, rather than wet-cured or brined. You don't get any excess moisture in the bacon with this method, it's just delicious.
