being from swabia a part of the world known for ugly but delicious food I know this has to be amazing. I will make this using the slowcooker this way it can cook all day. thank you both for sharing with us.

I have eaten this and it is real stick-to-the-ribs good filling comfort food. Which made me think of another Irish recipe, from Cork city, called 'Skirts & Kidneys'. Unfortunately NO-ONE seems to have put up a RU-vid video based on this recipe. I'm hoping you make it some day. You will NOT regret it !!!

Can hear just fine with ear buds. Of course, when Scott comes back on, you'll be deaf for an hour or two. So a person can win an award for boiled meat with potatoes and a dash of pepper. Amazing! It must be the Irish water!

Most around here are busying themselves with corned beef and cabbage for Saint Patrick’s Day, there will be parades, and below me geographically, they turn the river green. :oD I on the other hand will be trying Dublin Coddle for the first time.

Yes, I also had to turn up the volume, but, no subtitles required at least for me with an Irish Mum, and from Liverpool, quite a change Scott & Rooney, many respects both.

If you are having trouble with the sound, try a pair of ear buds. It gets a bit louder at 6:28, don't give up...it looks like a delicious dish. Thanks to both of you for bringing this to us.

Threw in some headphones and listened while going over some lecture notes. Simple dish, and I had no issues hearing or understanding what he said. With nothing but meat and potatoes, it has to be good! Great dish for poor college kids like myself. My family makes what we call boiled dinner, that has potatoes and/or turnips, carrots, lots of cabbage, and corned beef or ham chunks. Simmer it for ages, or slow-cook it for about 10 hours.

This is a new one for me and my family has some Irish in it. I sure do like the way it just looked so warm and good for a rainy day. We get buckets of rain here in Chile so it will be a good meal for us to try.

Nice to see how it's done in Dublin. Gives folks in the States a chance to see how it is done. I've made my interpretation of this but hard to get the "right" ingredients where I live. Looking forward to trying it this way.

I grew up on Coddle. I thought it was unique to Dublin, but discovered the same dish in Scotland called Stovies. Then I discovered it again in Flanders called Stoofvlëës (Boiled Meat). I’m convinced it arrived with King William of Orange troops, but Dubliners will never want to admit that.

"Fiddle-dee-dee potatoes!". Awesome! "Some bread for mopping up... and maybe even a Stout for washing down". Mark's Irish Coddle (Stew?) rocks... So simple yet clearly so satisfying. A nice format for a video.... Scott sets it up and Mark knocked it down. You should call out to more Scott Rea Project friends from around the world for video clips of their own heirloom recipes... hmmm?

ROFLOL! Just for giggles we turned on the CC to see if there were subtitles- because of the Volume. After a while it looks like someone TRIED. At times it was quite funny. Delicious looking. Turned up the sound and got most of it on my desk top. Portable tablet not enough volume. Great that he did it. He has a nice kitchen. I believe he said that was bacon. Would that translate to salt pork in the US. I don't mean that horrible grocery store kind or is it a smoked pork like ham?

The sound is low but if you put in some ear buds and turn it up, he comes in nice and clear. I'm thinking when he says bacon that it's not what we call bacon in the US. What do you recommend to look for Scott?

In the Crock Pot as we speak. Did some additions and substitutions because I had the stuff. Added Ham and Celery and Carrots - Subbed Smoked Venison Sausage for the Irish Sausage. I also fried the Bacon, Ham and Sausage and De-Glazed the pan with the Carrots and Onions and Garlic. Simmered the whole mess in 4-cups of Chicken Stock. No Guinness addition, however I am considering adding a cup of Home-Brew!! Made some "Crusty" Bread too.

I enjoyed the video (it was quiet) but the bacon he added is something I'll completely unfamiliar with here in the states. I know and enjoy rashers, belly bacon, and Canadian bacon , not the big, lean cubes he used. It looks fantastic in the end.

Simply marvelous! Hell he did a bang up job all considered. Audio quality wasn't that great but I liked the GoPro video. Not bad, not bad at all. He's entertaining enough that you need to get him back in front of the camera for another go wrong to the proper kit. Slainte!

I really think you have outdone yourself again. Only a wee bit shy of April fools day. But you got us good and clever! I'm not sure about the no MIC, but I'm a wee bit angle'n that he may have whacked the mute button. You're guess be as good as mine and me sons, daughters cousin in laws uncle. Low sound, and either its my speakers, i need new ones or my ears are dirty, lol....but around 6:28 the volume turned up a bit, interesting dish, Dublin Coddle, potatoes, onions, sausages and bacon? That's some chunky bacon there, uprated, thanks for sharin' Scott! :)

+critter getter I know what you're asking. I, too, did not recognize the cubed chunks as bacon. I'm guessing that it's not cured pork belly, but a different, leaner cut -- probably from the loin -- that may have been treated like the standard streaky stuff. It's like the difference between bacon and Canadian bacon.

Dear Scott, I generally LOVE your video's, but this one didn't seem to work on this side of the Pond. While I can appreciate that Coddle is traditional Irish dish, I'm sure it didn't look all that appetizing to me. Keep up the good work, Mike PS: It didn't matter that I couldn't hear your guest properly, as much as I couldn't completely understand from the video what he was doing.

I don't know if you will have and answer but what would the equivalent , or similar meat to use for the bacon. I have never seen that in the USA. We have smoked ham hocks, Fat Back, salt pork. Non of which look anything like the meat he used. Would county ham work do you think?

What kind of meat is bacon. In the States we only have what you'd call streaky bacon. Is the meat chunks used in the coddle, a cut of cured pork? Want to try this at home but I don't know what kind of meat to buy. I can get Irish bangers, but I don't know what Americans would call the meat. It's not ham, I think.

You don't need the SubTitles because of his accent you need them because you just can't hear him, I think I heard him say Bacon. To me Bacon is the rashers cut from the Pork Belly, He is using lumps of Pork. I would have added a couple of peeled potatoes at the same time as the meat was being cooked if I wanted to use it to thicken the Coddle. Why even bother with peeling the Spuds that went in later, Unless he is serving it with side cooked vegetables I would also have added chunky root veg like Carrots and Swede 10 minutes before the Spuds went in and Seasonal like Fresh Garden Peas at the same time as the Spuds

Bacon is cured pork not exclusively limited to rashers from the belly, you could use gammon, shoulder, leg etc. Peeling the potatoes and leaving them in water until adding them was so as to have all the ingredients laid out for the video, enough break down to thicken the sauce especially if left overnight. As for root vegetables or peas they're not part of the recipe and would completely change the flavour, even one carrot would sweeten the taste!

+Mark Rooney I do not care where you are if you ask for Bacon you do not get lumps of Pork like that,A butcher will ask you Streaky or Back, A few will ask normal or thick sliced. I have no idea why you have brought Gammon into your answer, That is a completely different cut of Pork. The Suds were peeled and put into a bowl of water to stop them discolouring, Makes no difference if Peeled or not. I would imagine it is mostly cooked and served when ready (Not kept until the next day) that is why I said about adding a Spud or 2 in earlier so that they cook down and thicken the Broth. He said it used up anything that was laying around and making it go further.To me that means adding plenty of the cheaper Spuds and Vegetables. When was the last time you sat down to a proper cooked dinner that did not have vegetables because I cannot afford to live on Boiled Meat and Spuds

+ANDREW CULLEN if I go into my local butchers and ask for some bacon the last thing he will offer me is rashers of streaky bacon for frying! There are so many cuts of bacon (including gammon), as for the spuds they were peeled to show as ingredients of course they have to stay in water and most importantly it was never served when ready it was typically left on the hob all day until the men came home from work or the pub - all the best dishes (stews, curries, bolognaise etc) taste better the next day!

+ANDREW CULLEN Hi Andrew, i feel i need to wade in here,as mark is completely right, and this dish is, to the letter, authentic, its been made this way since the 17th century, its a simple dish, call it peasant food, it comprises of 4 ingredients which is bacon, be it slices, be it chunks of gammon or shoulder, pork sausages, onions and for the majority potatoes, theres no added vegetables, no stock just those 4 basic ingredients and water, nothing else, its a case of if it ent broke dont fix it.here is what wikipedia say about it. Marks is spot on indeed... Coddle is particularly associated with the capital of Ireland, Dublin.[1] It was reputedly a favourite dish of Seán O'Casey and Jonathan Swift,[2] and it appears in several Dublin literary references including the works of James Joyce.[3] The dish is braised in the stock produced by boiling the bacon and sausages. Some traditional recipes favour the addition of a small amount of Guinness to the pot, but this is very rare in modern versions of the recipe.[2] The dish should be cooked in a pot with a well-fitting lid in order to steam the ingredients left uncovered by water.[1] The only seasoning is usually salt, pepper, and occasionally parsley. It could be considered a comfort food in Ireland, and is inexpensive, easy to prepare and quick to cook. It is often eaten in the winter months. In the days when Catholics were not supposed to eat meat on Fridays, this was a meal often eaten on Thursdays as it allowed a family to use up any remaining sausages or rashers. The name comes from the verb coddle, meaning to cook food in water below boiling, which in turn derives from caudle, a warm drink given to the sick.

+ANDREW CULLEN As for the bacon , in England we cure the whole of the pig, and have done for hundreds of years, hence the term a side of bacon,which is a whole side of pork cured into bacon, which consists of the shoulder, which once boned out becomes a picnic ham and the rest is collar bacon, the leg becomes gammon or cooked hams, the chump becomes a corner gammon joint and the loin kept whole is called middle bacon or if split called back bacon and streaky bacon ,so any part, of this side of bacon can be used as its all bacon, i personally favour collar bacon known as a bacon joint and ham hocks, but would use any of these in a coddle,many thanks

I have been looking for this dish, Anthony Bourdain had this when he visited some Dublin pubs, it is a bit like 'bacon bone soup' with sausages! (Coddle made with heroin do you say?)
