In terms of healthy meats, Duck is very healthy! The top lean meats(protein mainly and next to no fat) are Fish, Chicken*Poultry*, then Beef and Pork being last.

So if your gonna just grind it you can pick the whole bird apart. The neck, wing, leg, and thigh meat will add alot more and the grinder will pull out all the tendons and silver skin. We usually breast them and turn the rest to grind doubleing your take.
