Here's my super simple Irish Stew, cooked in a dutch oven on the Kamado Joe Kettle Joe. Cooking this way, with the meat over the top of the sauce means you get a nice subtle smoky flavour in the dish. I'm a big fan of cooking this way - why not give it a try?
