I used to make lemon meringue pie from scratch for my mother's birthday. She passed away five years ago. Four days before Christmas. Miss her like crazy. 😢
Kristin my son is a bakery chef and he makes his own lemon curd. He always gives me a big container and it is delicious. I use it on most things I cook. Loved this recipe and I will try it with his lemon curd.😂

Kristin and friends,z the waffle cobbler looked great! I love fruit desserts as well as lemon. I probably would have poured a box of lemon cake mix over that lemon curd then put some butter slices over the top. I might try it!💛💛💛
Lemon curd is soooo easy! Just lemon juice maybe 3-4 lemons, sugar, water and lemon 🍋 zest boil, add cornstarch mixture then a lil butter 🧈 like 1 tablespoon. Done! Lol...I can look up my great grandma's lemon meringue pie and get it for you😊

Homemade lemon curd is not hard but it can curdle real fast because you can't leave it on the stove you have to stir it constantly and the canned one you used is just as good 😁🎄
If I served this stuff to my family, they would think I had lost my mind. All that sugar and preservatives in that canned stuff and dry mixes. I will say though that Kristen is adorable and so pretty.

The reason these desserts work is the majority of people don't want to bake, or can't. If your worried about these desserts, think Friday movie treats (cobbler, candy brownies, lemon bars) and Sunday waffle brunch. Think TREATS not meal.😊😊😊😊😊❤❤❤❤❤
I really want to try the fruit breakfast bake. I also love cherry pie filling. ❤tried the Organic Comstock cherry pie filling, and it was awful. It tasted like too strong imitation almond extract. I might try toasting the waffles a little before putting them in the pan because I love crispy waffles. Lidl sells thick Belgian waffles in the bakery section that would be amazing in this recipe.
Everything is better w homemade, except it does take time. Make it ahead of your shoot, and just use it like you bought off the shelf. Also, you can actually purchase Lemon Curd.. as opposed to lemon pie filling..
