Don't let the simplicity of this dinner fool you. It is so delicious and fragrant. Sand ginger chicken is similar to Chinese steamed chicken, and the chicken is juicy, moist and tender. It just differs in the unique aroma of sand ginger. Using the instant pot and marinate (best overnight), you don't need to use expensive organic or free-range chickens; the result will always be excellent and perfect. The Kabocha soup is a nice complement to the chicken. The soup is light, mildly sweet, with a smooth texture. It is an easy healthy soup in 15 minutes. My family loves this dinner combination every time.

sand ginger (spicy bake) powder
2 to 3 lbs chicken thighs
3 green onions chopped
1 tbsp minced ginger
1 tbsp olive oil
1/2 kabocha
3 cups of chicken broth
1 tsp chicken powder
1 tsp sugar
1/2 tsp kosher salt
(adjust to taste)
2 chopped green onions
rice to serve.
