~ Strawberry mousse ~
【material】
・ Sponge No. 5 size 1 unit
・ Fruche strawberry 1 box
・ Milk 100g
・ Cream 100g
・ Powdered gelatin 5g
・ Water 20g
・ Strawberries (for mousse) 6-7 pieces
◎ Preparation
①. Wash the strawberries and drain them, and for the mousse, remove the calyx and cut in half.
②. Sprinkle alcohol on a ball with a diameter of 15 cm and lay a wrap on it.
③. Slice a commercially available sponge into 4 pieces.
④. Spread the sponge on the mold.
Save one for the lid
Put 1 sheet in 1 as it is
Cut the remaining two pieces appropriately and spread them to fill the gap.
☆ How to make
①. Sprinkle gelatin powder in water and let it soak.
②. Put the cream in a bowl and let it stand for 7 to 8 minutes while soaking it in ice water.
③. Heat the softened gelatin powder in a microwave oven at 600w for about 1 minute to melt it.
(If it doesn't melt completely, please heat it while watching the situation!)
When it melts, leave it as it is and let it cool a little.
④. Put Fruche in another bowl, add milk to it, and mix quickly with a rubber spatula.
⑤. Add the cream in two portions and mix well each time.
⑥ Add a little 5 to 3. and mix, then return to the whole and mix well.
⑦. Pour half the amount into the prepared bowl, put the strawberries on it, and then pour the rest.
⑧. Cover the sponge you set aside from above, lightly hold it so that there are no gaps, and cool it in the refrigerator for 3 hours to harden it.
~ Finishing ~

・ Strawberries (for decoration) 3-4 pieces
・ Cream 150g
・ Granulated sugar 15g
(If you do not squeeze and decorate, it is a little difficult to do, but 100 g of fresh cream and 100 g of granulated sugar are OK)
☆ How to make
①. Place the mousse on a plate or rotary table, turn it over, and remove it from the ball.
②. Put fresh cream and granulated sugar in a bowl and stand for 7 to 8 minutes while soaking in ice water.
③. Apply fresh cream from the top
First, apply fresh cream to the entire surface so that the sponge cannot be seen, and then apply it from the bottom to the top to finish it.
④. Squeeze the cream to your liking and decorate with strawberries.

・ Unsalted butter is used for butter.
Salted butter is not recommended as it will change the taste and finish.
