Easy Bourbon Mash (Yellow Angel Yeast)

Recipe:
150Litre Barrel Fermenter
25kg Cracked Corn
5Kgs Malted Barley
5Kgs Malted Wheat
58gms of Yellow Angel Yeast
Mill Cracked Corn so its almost corn flour
Dump all Corn into fermenter and add 70 Litres of almost Boiling/boiling water
Add Malted Barley and Malted Wheat
Add Water to 140Litres
Wait until temp gets to 35c and add Yellow Angel Yeast.
Stir everyday for 4 days.
Strip the wash, Then spirit run nice and slow making cuts.
Add together and add to American oak and age for 6-12 months!!

a full grain mash yes it takes some time but its well worth it. i just distilled a dark grape wine and added 20 kilos of sugar and it bought it up to 12% potential alcohol , 96 litters. the juice was 100% deice, i stopped collecting at 60% ABV. Put it on some French oak at 60% ABV , yes its so good taste. Sent it through a thumper. 100 litter boiler and a 30 litter thumper. double distilled on the one run .

i liked what you say about the Angel yeast so i ordered a packet, there are a few different mixtures of angel yeast that i saw, but i did order the one that you have. I ran that corn mash yesterday, I did a video for you, I'll put it together soon and show you.

Cheers for the video! Have been curious if my Thermomix could be my grain grinder! Hahah Have a lot of corn and am curious to see if I can try this out with 100% corn, Any reason you see it not working? Do I need to add some sort of malted barley. Cheers!

No reason why it wouldn’t work, just be interesting to see the yield. The yellow label yeast is still very in tested when it comes to other starches other then rice, only have what other people have done. The bigger the sample size the better evidence we have!!! Happy distilling. Also a thermo mix tip, don’t put too much in as you’ll stress the engine.

I haven’t done a bunch of all grain to be honest just getting started on all grain after many years of sugar washes and ujssm style mashes. I will def give it a whirl on the next all grain I do. Stay tuned!!!

​@@gezzmang1 Awesome!! i do an all corn cold mash tecnique. i basicly use 4 pound malted ground corn, 4 pound cracked corn 30 gall water 30 pounds of sugar. a flaavored sugar wash basicly. im lookin foreward to learning more on all grain!!

This Yellow Label Angel is magical stuff. No more high temp mashing! Only drawback is you are forced to ferment on-grain. How did you filter it when you transferred from bucket to boiler?

Now I’m a little new to the distilling world but have been brewing beer for years, so I ran your numbers and I come out with just under 5% ABV I know your bided was about the yeast but it seems you need to double up on your grains to get you closer to 10% or add sugar! I’m just saying to yield more you have to have more sugars most bourbon or whiskey makers shoot for the 10-12% range for quality Please let me know if I’m wrong! In relation to this recipe I would do the same I just wouldn’t use angel yeast. I’ve been trying to do more runs with it but it seems it imparts are really vomit like smell to anything that isn’t rice. The flavour of the bourbon is great however I just can’t get over the smell unfortunately

Just curious why you don't use hydrometers to be sure of your gravity readings. Enjoying your videos. About to do the plum brandy any day now with my 40kgs of plums

Reason being mate, in this video I used yellow angel yeast which converts starch as it goes, so you can’t take a gravity reading as the starch hasn’t been converted to sugar yet. I use my hydrometer in almost everything else I do except when using yellow angel yeast

@@Firestalkeriq all good, this is is relatively new so getting your head around how it works is a different beast, making sure that it’s finished fermenting is also something else cause in my experience it lightly ferments away for a long period of time.

Did you really need to do the boiling water for the mash? I'm watched a few other distilling videos when the use the Yellow angel yeast and they all say a key bonus is you don't need the mash. You can actually use just straight cold water (check out Jessie's video in still it,) with your grain mix and that yeast will ferment just fine. Im giving it a try bc I'm tired of straining burning cornmeal through a grain bag.

So my theory was, that yeah I probably could have done cold water, but I wanted to get the most out of it, the corn I got was coursely ground so I wanted to try and soften as much of it as I could. I’ve seen Jessie’s one and he also did a hot water one as a test and that did slightly better then the cold. I’m going to do this whole recipe again later on in the year and I might even do a side by side comparison with cold water to see if there is much difference. I also thought that getting it up to temp would have been a little more tricky if I used cold water as it’s fairly cold where I am at the moment. So using hot water and letting it cook was easier then going cold and heating it up with belts and pads ect. Thanks for watching mate appreciate it and the feedback !

It will still help if you gelanitize your corn starches first and that takes boiling water. The molted barley should have enough enzyme in them to not need the angel yeast

Oh sorry i didn't add 20 kgs of sugar " that was the other corn brew that I'm working on now and its ready to go now" I think it was about 16 or 17 kilos of sugar i added, the juice itself had a Potential 6% ABV. the sugar bought it too 12% potential ABV

@@gezzmang1 16 kilos of cracked corn, 1 can of LME malted barley and wheat. its fermented down to under 1.000 its ready to go when i get time to run it. 20 kgs of sugar, got it to 12 percent potential ABV

Wait until the mash hits 67C to add the malt otherwise it will deactivate the enzymes which will convert the starch.

Nah man, doesn’t need to be malted I just couldn’t get my hands on unmalted barley so still work the same regardless.

Something went wrong. You didn't get much out of all that. I have found the dark malt mash I did with dextrose and 1 cup of rye is better than any all grain. Then I reused left over malt from mash added more sugar and new rye. In total I got 5.5 litres of 70% for $65. At first I didn't think it was going to be any good. 2 weeks on chips omg it's by far the best.

It seems your yield was very low, you may have under pitched the yeast, I typically like to use 25 g per 5 kg of grain. For 5 kg of corn I get about 3L at 55%. I would have pitched about 200g for that amount of grain, and would expect about 15 to 20L at 55%. Great video mate thanks

@@gezzmang1 with the yellow label yeast you should use min 0.2%-0.6% of the grain weight, you had 35 000 g of grain, so at bare minimum you would need 70 g of yeast mix to possibly get full conversion, typically people use 0.5% as this has been tested and confirmed to convert very well, meaning you would need 175 g. I use 0.6% as I would rather convert all my starch and get a good yield than to save a bit of yeast mix. You used 58 grams putting your yeast mix percentage at 0.16%.

Ageing is going well mate, as is life I was doing a angel yeast experiment and it’s been scrapped because some little hands got into my brewing room and pressed buttons they shouldn’t have and destroyed the whole process. So that’s been put to the side and I’m working on some other stuff but I’ll be posting a quick vid in the coming weeks about how it tastes ect.

@@edwardpitts5205 yeah mate, so this yellow angel yeast is supposed to work without the whole mashing process. It’s first use was for the production of rice spirits but can be essentially used with all starches.

I think easy recipes are the best we're not scientists did you just get the grains from a animal produce store I've heard all sorts of bad news about that but that was my thoughts of getting it from there also I use a 200 l fermenter and a couple of fish tank heater elements I find your benefit 100% of the heat rather than a strap you only get about half of your heat how long do you leave your distillate on staves before you think it's ready what do you do with all your leftover heads and tales
