Chicken Pilau or just any pilau is one of favorite one pot dishes to make at home. Its fragrant from the aromas of the spices and its definitely a crowd pleaser. With a just little planning you can it as a week night dinner and you and you family or friends are certainly going to enjoy it.

List of Ingredients used
3.5lbs ( 1.589 Kg )chicken thighs , bone in ,skin on
1 Tbs vegetable oil
Salt and pepper
1 Tbs Spice mix or pilau masala
1Tsp Turmeric
1Tsp Chili powder
2 Cinnamon sticks
6 whole cloves
6 Green cardamoms
1 Tsp whole garam masala (optional)
1 Tbs Ginger , minced
1 Tbs Garlic, minced
1 Tsp brown sugar
1 Tbs Red wine vinegar
1 Tbs Worcestershire sauce
4 Curry leaves,
1 Red onion , sliced
1 cup carrots, small dice
1 cup yell/red bell peppers, small dice
2 scallions/ green onion, whites
1/2 cup Peas, frozen
1 Jalapeno or green chili, seeded,
2 cups Basmati rice, rinsed and soaked
4 cups chicken stock or water
1 Tbs Ghee (Optional)
!/2 cup Cilantro chopped, for cooking and garnsh
1 Scallions, greens
