You get the best of both worlds here! Easy cowboy candy recipe (candied jalapeños) and delicious homemade cornbread. Cowboy candy essentially is a sweet pickled jalapeno. It is sweet with a little bit of a spicy kick. Too easy to make and delicious. If you want a little more heat, add in some hotter peppers. My favorite way to have cornbread is with something sweet drizzled on top, which you get from the syrup in the cowboy candy. Match made in heaven.

Ingredients for the cowboy candy:
6 jalapeños
1 c white distilled vinegar
1-1/2 c sugar in the raw
1 tsp anise
1 tsp cumin
2 tsp chili powder
Ingredients for the cornbread:
1 c flour
1 c cornmeal
1/2 c granulated sugar
1 t salt
2 tsp baking powder
2 egg
1-1/2 c whole milk
***or you can use buttermilk
2 tbsp heavy cream
1/2 c softened unsalted butter
1 tbsp butter for coating the cast iron pan
