INGREDIENTS:
Bone-in and skin-on chicken thighs
1 leek
1 medium white onion
4 cloves of garlic
Butter
2 lemons
1 cup of chicken broth
1 cup of white wine
Thyme
Olive oil
Cream
Salt & pepper
DIRECTIONS:
For the wet rub mix 1 tablespoon of salt, 1 teaspoon of pepper and 2 tablespoons of olive oil
Generously apply the wet rub to the chicken thighs on both sides
Place the chicken thighs on a baking sheet
Preheat oven to 400°F (204 °C) and bake chicken thighs for 40 minutes
Finely chop the onion and leek
Melt 1 tablespoon of butter and 2 tablespoons of olive oil
Chop garlic cloves
Sauté onions and leeks until soft and translucent
Add garlic and sauté for about 2 minutes
Add 1 cup of chicken broth; bring to a boil
Add 1 cup of white wine; bring to a boil; lower heat to medium low
Add 1 cup of cream
Squeeze the juice of 2 lemons
Mix well
Remove chicken from the oven and place onto the onion mixture
Add the juices from the baking sheet
Scrape chicken fat and add to the onion mixture
Return chicken to the oven for about 15 minutes
Remove chicken from the oven and add thyme and lemon wedges
Plate with your favorite rice and top with cilantro and hot peppers
