Is the fat content the main factor for the cream? In that case, will Whipping Cream or Double Cream suffice? Since they also contain 35-38% fat

Just tried this recipe today. Have to agree that the egg tart is smooth and silky when baked at 120 degrees. But then, the tart is still underbaked. Guess i have to bake the tart longer before adding in the custard.

Yes, every oven is different so you have to adjust accordingly

If i want to make a huge egg tart (9 inch) would the temperature remain at 120C?

The temp is in Celsius not Fahrenheit.

You can use whipping cream with a fat content of 35%

@@RuthCBH It can be used as whipping cream. Whipping cream is just high fat fresh cream. You can find Payson Breton and President at the supermarket shelves

When I use all Almond flour, the texture was a little too hard. The tapioca flour makes it more brittle

Heavy cream is fine. French Cream is just heavy cream from France
