This is my sourdough bread recipe but made with poolish instead of sourdough.
Poolish:
100 grams bread flour
100 grams water
1/8 tsp instant yeast
Feeding
All of poolish
200 grams bread flour
200 grams water
Dough
600 grams bread flour
460 grams poolish starter
400 grams warm water
90 grams rye flour
20 grams sea salt
