I try to stay away from the term "authentic" when writing recipes, but with this I can confidently say that these carnitas are NOT authentic. But they are delicious and they are easy.
Real carnitas should be cooked in lard, and I'm not gonna lie they are much better that way. But in an attempt to make this a little more approachable, these are simply braised in water.
If you have lard use it.
Easy Carnitas:
1T High Heat Oil
2t Cumin
2ea Bay Leaves
1ea Dry Guajillo Chili
1ea Onion
1ea Orange
3ea Garlic Cloves
2-5# Bone-In Pork Shoulder
Water (or lard) to cover
TT Salt
