This might be my favorite so far. I usually cook my burgers on the grill, but if I am cooking on the cast iron how do I know when it reaches 350 degrees?

Hope someone can answer my question. I've eaten burgers that either are sort of crumbly where in you know its ground round and others that are springy and more congealed like a mc sausage. How do I get the mc sausage like consistency? Is it dependent on the fat to lean ratio, number of times it is ground or someother factor? Thanks in advance.
