Easy Haupia Recipe
Ingredients:
1 can (13 oz) coconut milk amzn.to/2Mts3GM
¼ cup granulated sugar amzn.to/39Gkzuc
5 tablespoons cornstarch amzn.to/2PZ6yQj
1/2 cup water
Directions:
Lightly grease an 8x8 pan with non stick cooking spray and set aside.
In a medium mixing bowl add water, cornstarch, and sugar. Whisk until well combined. Set aside.
Add coconut milk to a medium sized pan over medium high heat and heat until the liquid just starts to bubble. Stirring frequently so the milk does not burn.
Then add the cornstarch mixture to the pan and continue to stir. Heat until the mixture starts to thicken and resembles pudding. Remove from heat.
Pour the haupia into the prepared 8x8 pan (amzn.to/39Lt47j) and allow to cool. Then place pan in the refrigerator until set, about 2 hours or you can leave it overnight.
Cut into squares and ENJOY!

So good. I ended up using Brown sugar and Tapioca Starch. I also boiled the coconut with pieces of Banana leaf to put some of the Banana leaf flavor into the Coconut Milk. Tastes so good!

I use arrowroot [1/3 cup to one can of rich Coconut milk]as thickener, with just a little raw sugar so as not to overwhelm the coconut taste. I blend all ingredients in my blender. I also put in some cardamon and saffron to make it more Indian. A little Rose water is good addition too. After blending I can add some pistacios which also makes it more Indian. My haupia is truly a hapa Hawaiian/ hapa Indian dessert. It is very ono. You must try it.

Aloha Relle! If I want to make the haupia a bit creamier, what would you recommend I add? More coconut milk? I’ve seen some other recipes that added in whole milk as well, but it seemed that actually made the texture more pudding like instead of the squares I’m used to! Mahalo!
@KeepingItRelle
@KeepingItRelle 4 года назад
I have a recipe for soft set haupia that is used on sweet potato haupia pie bars. That on is creamy, but it does not set like a jello consistency that the classic haupia squares do.

So I came to this video because I was curious if Haupia was anything like Puerto Rican Tembleque. Turns out it’s almost identical except we don’t use water. There are so many different recipes out there with different ratios but I’ve always made mine with only coconut milk, sugar, and cornstarch and it is VERY creamy and it still sets up like a jello or a flan would.

Your recipe says 1/2 cup of water but in the video it looks like 1 cup. I followed the recipe twice using 1/2 cup water and it thickened within seconds, had to pour it out quickly. Result was medium pudding consistency. Taste is good but was disappointed that I could only scoop it not cut into squares. What adjustments do you think I should make?
@KeepingItRelle
@KeepingItRelle Год назад
It's 1/2 cup of water. If the haupia isn't setting it needs to be cooked down longer. Pudding consistency happens when you don't cook it as long. Hope this helps. Have a great day.
