I'm a college student and most plant based foods are cheap! Pasta with a tomato sauce is good, salads are cheap, bean and rice burritos are cheap, etc.
I’m watching my weight so I’m on a potato only diet. I boil 4-6 potatoes and store them for throughly out the day. I eat them with ketch up, coleslaw dressing, cocktail sauce for some flavor. I also add a salad and switch to oatmeal or pasta from time to time for some vitamins. It’s been pleasant and the meals are flavorful and filling, kept me concentrated on school work by saving me time from cooking for each meal. My energy level is high through out the day. I forgot to mention, there’s this pre made curry mix in the brand McDonnells, in local grocery store for $2.49, you can dump potatoes and carrots with the mix in cold water, boil for 30mins then add peas for a homemade meal. I eat it with plain rice. It lasts me for two days at least. I got the idea from Indians, folk cook their curry once and eat through out the week.

Please, please, please do more vegan meal prep videos. These are so helpful and useful for work weeks when I feel brain dead and can't come up with ideas. I know there's a lot on the internet but watching these kinds of videos just makes it so much less intimidating

My husband is non-vegan too and lovveeessss just about everything in Ellen’s cook book! We don’t eat any meat at home (because it icks me out) and he’s quite happy to eat anything vegan from her cookbook!

I am dairy free and gluten free thanks to my gallbladder this year. I've lost 33lbs in a month thanks to clean eating. Can't wait to encorperate more vegan and vegetarian meals in my future life thanks!
I make Mason salad jars just like that but if they're going to be in the fridge for a day or two I put a napkin on top where the lid goes on I just stuff it on top of the lettuce and I flip it upside down so that any moisture from the salad goes to the napkin and when I open it I just take the napkin out and have fresh dry salad

Fresh packed “Fancy” dates from TJ’s are a GODSEND. I eat those ones just out of hand or stuffed with nut butters, but I use dried ones soaked in some warm water to blend for smoothies OR cooked down in some oatmeal with cinnamon or homemade gingerbread spice

I made stuffed dates all the time! But I take a nut butter, add nuts, chia seeds, hemp seeds, cocoa nibs, and a little salt then I stuff them and freeze them 🤤
Ellen, I’d like to say that I truly appreciate your balanced approach to cooking, eating, and nutrition. I have a history of eating disorder, which has caused me to hyper focus on food rules and measurements, and taken away all the joy from food and eating. At the same time, I’m a passionate vegan, and also well aware of the research showing how certain foods are closely linked to many diseases. You seem to have a really healthy take on diet. You don’t seem to get caught up in micromanaging everything you eat (no salt, no sugar, no oil, no refined flour - EVER!), but at the same time, include a bounty of foods which are undeniably health promoting. You display joy in preparing, eating, and sharing food. I love that you aren’t fussed about measurements! I love that you don’t judge bodies - your own or others’. I’m not there yet, but I hope to be someday. In the meantime, it’s inspiring to see an example of a vegan with a truly healthy relationship with food.

Hi Ellen, I made the waffles from your Epic Vegan cookbook today. I accidentally put 1 t of baking powder instead of 1 T but they still turned out great. I will definitely make them again with the right amount of baking powder😂
I've tried a few of your recipes through the years and every single one has been delicious!! My family and I are not vegan but we try to primarily eat plant based the majority of the time for environmental and ethical reasons. I had a gastric surgery in August and now it has become a necessity rather than a choice. My body simply cannot digest meat. Do you have any tips on how I can get in way more protein in smaller portions? I'm struggling because my body can't handle large amounts of food, meat or most animal based products, processed foods are tough, and after 6 months of primarily living off of protein shakes I'm struggling mentally and physically. Any tips to get in more protein in smaller portions would be so so appreciated.
I would recommend organic tofu and organic tempeh, it's one of the easiest way for high protein - small portions. The other options are chickpeas made into hummus or just eaten as is. Half a can of cooked chickpeas will get you enough protein. My other tip is red lentils since these can be cooked until soft and hidden in other foods like oatmeal, or even hummus! The other tip is focusing on nutrient dense whole foods and avoid less nutrient dense whole foods, instead of iceberg lettuce choose kale or arugula. Instead of cashews, choose chickpeas. Hoping any of these tips might help? :) Wishing you well with your recovery!

Definitely love rich greens and my body doesn't do well with iceberg. I love lentils and feel like a dumb dumb for not thinking about adding them in to my diet!!! Every suggestion helps and I'm very grateful you took the time to offer help!!!
The only problem with oat muffins is that they're awesome the first few days, then they get kind of icky (I keep them in the fridge, if not they get moldy too quick). But they're AMAZING fresh!!
Recipes look delish! I spotted the stone water dispenser in your cabinet that I’ve actually been looking at online. Do you have a glass water jug ? If so, where is it from and is it 3 gallons?
In the Blueland set you are showing has ingredients that are synthetic and include SLS. If you promote natural products and try to be organic as possible, why would you recommend products with such ingredients? Wouldn’t Essential oils and or vinegar be more suitable?

If you are a person who is overweight and pre diabetic would you still recommend this way of eating! I’ve been doing keto with a doctor for 4 months. Although I’ve lost 20 lbs. i feel terrible. But I need to lose weight to get healthy. I’m a mom of 7 and 100 lbs. overweight. I’m desperate for the right information. Thank you💜

I really enjoy the receipe videos. One suggestion, especially with this video, is that I wish that the ingredients/measurements were listed at the bottom of the screen as you were adding them. A few times, the music over powered your voice and made it harder for me to hear. Please keep these recipe videos coming!
I know you and your sister aren’t college students but if you made easy quick meals for a college student in an e-book i would get one. especially if you talked about budgeting too!
