Thank you for an excellent tutorial. If you just allow the whey to drip away & skip the last process (of putting it in a bowl with weights, etc.), this cheese is called Labneh in the Middle East (very popular at breakfast). A quantity from the main batch is taken & placed in an 8 oz bowl (or close to that size) & smoothed down. Olive oil is poured over just to cover (not too thickly). It's then used as a spread on bread, or a dip. You can use the 3rd step cheese (cream cheese) as a pizza topping instead of mozzarella (just add it 5 minutes before taking out the pizza from the oven. Don't throw away the whey! Use it instead of water for your dough (many other uses: check on Google). Drink half a glass in the morning as a probiotic.
@@jonipleau9284 Yes, labneh won't hurt you nor will yoghurt. When milk is cultured (being turned into yoghurt, the yoghurt culture added to the milk eats up the lactose to turn it into yoghurt - at least that's how I understand it). I'm lactose-intolerant also & have no issues when I consume labneh or Laban (yoghurt).

I do have a question. My yogurt has been in the fridge for 3 days. By the way, it tastes great with blueberries and a touch of vanilla or honey.You said leave for 1-2 weeks before making cream cheese, I guess I'm impatient and wanting to get started. Question for ya, how long does the cream cheese last? I'm making the same amount as you did on the video and I'm wondering if my family will eat it all in time. They probably will, but I'd like to know how much time I have to get it eaten or gift it to friends and family if we can't finish it all

Use a 1 gallon nut milk bag. It will fit tightly over a cereal container. Snap the lid over the whole thing. A very neat package to sit as long as you wish in the fridge. Salting before straining is much easier. Make kefir for this, it has a much better probiotic profile. Find raw milk.

Thank you for answering my questions about why so many people are doing discards and feeding it every day. Now I need to hunt down a better wheat so I can start mine. Also our local Amish run a meat market and I am pretty sure I saw yogurt and butter milk in their shop so I'm thinking of using theirs as my seed\starter with my yogurt. Have you made these products with maybe half a gallon of milk instead of a whole gallon? I assume the process would be basically the same. I'm afraid if I make such a big batch that it would go to waste before we could eat and enjoy it all. The gut health benefits alone and how easy it looks to do, sold me in minutes. I'm so excited to try these out with my boys. I am a homeschool mom, who has raised garden beds, chickens and ducks running around. @@UtilaLodge1 Hi, The yogurt has that twang.. When I drained the whey the flavor became more mellow. As I aged the cream cheese for a few days the taste was delectable! More flavorful than bland store bought cheese. I really like the fullness of that flavor. You can add a bit of honey or agave nectar to move the flavor closer to sweet. Whatever you use to customize the flavor, add a little at a time. Let it rest. Check your flavor profile again. Hope this helps.
@@nutajaw fill your cake mold with water, measure the water, thats how much cream cheese you need, or slightly less to accommodate the eggs. Bake in a cake mold, not springform pan. Place on a tray and add 1/4 inch cold water, bake at 325 until it jiggles like jello. Do the whole thing by eye, add enough sugar to suit your taste, enough eggs to make texture like thick flowing mud.

Enjoyed your straw bale planting vlog from 2015 and wondered if the saying on your shirt was a scripture verse. Going to try a straw bale garden this year. Straw bales around here cost $15 but my brother who lives and hour west can get them for $3.50. Lucky us.

By the way, kosher salt just means the crystals of salt are dried in capsule form. It's used in making meat kosher since it absorbs blood better than sense salt, and they salt the meat to extract the blood in the koshering process after slaughter.
I make a great cheeseball. Would love to do this and make my cheeseball! Yum! Btw...you could put the cheese in a jello mold or maybe even a bundt cake pan if you can figure out how to press. And, with milk at $1.07 a gallon? No-brainer!
I had no idea cream cheese was that easy! I seriously thought there was cooking, and temp taking and special cultures. I'm going to jump right on making some yogurt TO-DAY! I've been making sourdough bagels and so when I put store bought cream cheese on them I looked at the cream cheese container and saw more than one . type of gum added. It doesn't take a genius to know that they are not taking the time to make real cheese, they are just adding thickeners to make it appear to be cheese.

How long do you let the yogurt sit before you make the cream cheese? I know you mention the yogurt getting thicker as it sits, so didn't know if that makes better cream cheese.
Can I use this cream cheese for making japanese style cheese cakes? This seemed more like Greek yoghurt than cheese. So I am a bit hesitant. Looking forward to your reply and opinions.
