Ingredients:
3 cups white rice, long grain, cooked and cooled
3 pcs eggs, beaten
3 tbsp vegetable oil, divided
¾ lb shrimps, (fresh or frozen), thawed if using frozen, peeled, and deveined
1 tbsp white wine
⅓ cup celery, minced
⅓ cup yellow onions, minced
⅓ cup carrots, minced
Salt and ground white pepper, to taste
To serve:
Green onions, chopped
⬇️ How to make Shrimp Fried Rice ⬇️
0:22 Heat up 1 tablespoon of oil in a wide skillet over medium heat. Add the shrimps and saute for roughly 3 minutes until shrimps turn pinkish.
0:41 Deglaze with white wine and reduce until the wine is completely absorbed, no more than a minute. Set aside.
1:02 Using the same skillet, heat up the remaining oil over medium heat. Add the onions, celery, and carrots then saute until translucent.
1:31 Next, add the cooked rice. Continue sauteing, while loosening any clumps.
1:41 Reduce heat to medium-low, then make a well at the center of your skillet.
1:50 Add the beaten eggs and stir for roughly 2 to 3 minutes until it starts to scramble.
2:00 Add your cooked shrimps back into the skillet, increase to medium heat, and continue sauteing until eggs have been evenly incorporated into your rice.
2:13 Season with salt and pepper. Adjust accordingly.
2:28 Garnish with ¼ teaspoon of green onions per serving and serve!
