Easy homemade kale mustard greens kimchi without using refined sugar. If you like kimchi you should definitely try to make this recipe. So easy, simple and delicious.

케일로 김치를 만들 수 있을까 생각하다 한국의 갓과 비슷한 머스터드 그린과 부추, 사과, 양파를 넣고 김치를 만들어 보았어요. 케일이 예상외로 상당히 맛있게 익어 주어 얼마나 좋았는지 몰라요.
숙성 이틀날은 김치국물이 많이 없어 걱정을 많이 했는데 삼일째 되는 날 정말 너무 너무 맛있게 익어서 기분이 좋았어요. 혹시 해외에 살고 계시는 분들 김치 드시고 싶은데 배추가 없어 힘들어 하셨던 분들 한번 케일로 김치 만들어 보세요. 케일 대신에 머스터드 그린으로만 김치 만들어도 한국의 갓 김치 처럼 되서 정말 너무 너무 맛있어요.

만드시자마자 참기름이랑 깨뿌려서 겉절이처럼 먹어도 맛있을거 같아요 ^^

minsun kim 안녕하세요 민선님!! 아.. 그게 케일이 제가 사는 여기 뉴욕은 조금 억쌔요. 그래서 바로 해서 드시면 턱이 좀 아플 수 있어요. 그래서 숨 많이 죽이고 익혀서 먹으면 정말 맛있어요. 가차이 살고 계시면 좀 나누어 드리면 좋은데...💕

^^아 그렇군요.... 전 한국에 살아요. ~~~ 샌디에고에서 4년 살은적 있었는데 그때는 갈아놓은 케일만 먹었다는... ㅋㅋㅋ 어쩌면 남편이 뉴저지로 발령 날수도 있어서.... 저도 Joanne님 스튜디오 가서 자세 교정 받구 싶어요 ^^

@@_joannerhee7722 hi. thanks for asking. yes I did it. I couldn't resist. I am a little fermentation queen :). I made it with my own twist. It was ready in 3-4 days. I added kimchi sauce and fish sauce and couple of table spoons of my fermented cabbage juice to jump start the process. I am on my second batch. this time I added a cup of shredded cabbage. its so delishious. The smell is little of putting :) but I love it. Thank you for the idea. I usually can't eat kale its very hard for me to digest and its chewy. But fermented is ok I hope.

MJ Chu MJ님! 이제 알았어요. 너무 너무 반갑고 정말 고맙고 여기서 또 제게 이렇게 힘을 주시니 얼마나 고맙고 감사한지 모르겠어요!! ㅁㅈ님, 케일하고 머스터드 그린에 수분 다 빼고 하면 국물이 나올때가 없으니까 처음에 고추가루 넣어서 버무릴 때 살짝은 물 조금 넣어서 쪼금 자작하게 해 주셔도 되니 꼭 참고 하셔요!! ㅁㅈ님, 정말 너무 반가워요.... 이제야 예전에 덧글 달아 주신 분이 ㅁㅈ님이란 것 알겠어요!!♥️ 가까이 살고 계시면 제가 담근 김치 나누어 드리고 싶어요!🥰

MJ Chu ㅁㅈ님 참 오랜 동안 이렇게 마음이라도 주고 받을 수 있는 통로가 있어 참 고마운 세상에 살고 있구나 하는 생각도 들어요. 현대문명이 인류에 좋은 일도 분명 기여 하는데 이것을 남용하는 것이 문제가 되니 안타까울때가 많아요. 가까이 계시면 제가 만드는 것들 다 함께 나누어 드리고 싶어요. 그제 또 새로 담은 김치 이제 익어서 몇통은 저희 고객님 드리려고 준비 하고 있어요. ㅁㅈ님께 보내 드리고 싶어도 가다 김치국물 흘르면 다른 우편물 다 손상 될까 또 우체부 아저씨께 민폐 끼칠까 싶어 참고 다음에 울 ㅁㅈ님 우리 언제라도 만나는 그 날이 있다면 제가 꼭 선물 할께요... 항상 정말 감사합니다 ㅁㅈ님!!!♥️

Hi Mama Joanne, I have tried kimchi once & it was too hot 🌶 for me. This kale,ginger,chive, & apple kimchi looks amazing!! You're too cute with your toes coming out of the top of your slippers. I saw all kinds of trophies behind you, aee they all yours? You're like sunshine, you make me smile 😁❣Good job 👏👏👏 making kimchi Mama Joanne! Hi Tina, how are you? I never tried anchovy paste for my kimchi. But you can try a small batch to see if it turns out nice. I feel as if it, it will do a good job but looks little different since the paste is dark. Try Tina!

What is the difference between the chili powder from korean kogchigaru?

Hi Jose. How are you? Korean chili 🌶 powder (gochugaru) is finely ground up sun dried red pepper flakes. And chili powder you normally buy at the grocery store has oregano, paprika, dried onion, cumin and cayenne pepper in it. 😅

Hi, I wish I'd discovered your video earler. I have a question, can I ferment the kimchi for longer than 3 days? If so, what is the maximum amount of time I can allow it to ferment? Also, is it necessary to massage the kimchi on each day of fermentation, as you do in the video? Thank you in advance for any advice you can give, and thank you for the wonderful and informative video :)!

Hi Marakesh, how are you? Yes you can ferment your kimchi for more than 3 days but if your room temp is hot, your kimchi may create a little mold. If this happens, just remove it. I massage 💆‍♀️😂 my kimchi to make sure that they are evenly marinated + remove some gas + air in between the cabbages. When you toss and turn, make sure to push them down a little bit. Enjoy & satay safe!! ♥️

Hi Smiling how are you? Method 1: If you do not have a shellfish allergy, you can use 1 fresh crab with 1 cup of water. Boil it for about 15-20 min. Then use this crab juice to base the kimchi. Do not put the cooked crab in it. 😅 Method 2: Make sure to salt the cabbage and other vegetables well. Then rinse. After your cabbage is ready to mix, add enough chopped garlic and hot pepper flakes and then add little bit of cane sugar to taste. If you want you can use monkfruit sweetener instead or grind up more pear or apple. Taste the kimchee to see if you like that taste. Then ferment for a few days until you like the sourness of the kimchee. Hope your kimchee turn out nice!♥️ Enjoy and stay safe hon!

@@smilinghappily6190 Hi hon, I use food processor to grind up one full fuji apple, onion, garlics, and little bit of ginger to add to my kimchee. It will be just fine if you do not use the fish sauce at all. Hope you like the kimchee and stay health sweetheart! ♥️

I hope this isn't a dumb question, when you fermented the Kimchi was it in the fridge or outside the fridge?

waynycely91 Good morning! How are you? It’s better to ferment the kimchi in room temp. Do you like well ripen kimchi? If you do, put the kimchi for about two to three days. During summer times, it takes two day to ripen your kimchi though. After about three days, your kimchi will well ripen and also created a strong pungent smell too. But don’t be shock. 😱 It’s all natural. Toss them few times and taste it to see if you like the sourness of kimchi. When it’s ready then it’s ready to put your kimchi into the refrigerator. Hope you enjoy the Kimchi and stay healthy hon!!♥️

waynycely91 If you like, add some cabbage too. Cause kale might make your jaw muscles to work hard though. Cabbage + mustard green + kale will be a great combo! Hope you enjoy the kimchi and stay well!♥️♥️
