Samgyetang is a traditional Korean chicken dish. Chili pepper is not used in traditional Korean food. The most Korean fried chicken is soi garlic fried chicken. Gochujang is not a traditional Korean food ingredient. White kimchi is a traditional kimchi without chili peppers.

Yes!! I truly don’t understand why people are obsessed with using chicken breasts. Chicken thighs are SO much better tasting and way more moist! And the thighs are usually cheaper too.
A properly brined chicken breast is better for frying. I like thighs better for grilling and pulled chicken. A overnight buttermilk brine will break down the connective tissue and keep it moist.
