I love Earl Grey too! It really is up to you. With my lemon syrup I put 1.5oz for a 16oz cup. The tea should be about 5oz. This is the proportion that I use. I keep a bottle of lemon syrup for my tea or simply for a lemon soda or a lemon mint soda :-)
Hello, the syrup thickens when it cools down. I usually boil only once after adding the sugar to avoid further unnecessary evaporation or potential crystallisation...my style :-)
@@rizasri oh totally, I suggest checking it out though it really changes the flavor to simmer it after being made. Also no heat you can just cover the peels in sugar and macerate it. Macerated and simmered it takes on a very rich and full lemon flavor. I’m sure yours is great just suggestions for you to try!
