Today, I'm excited to share a recipe for Healthy Ground Beef Lettuce Wraps. This dish is not only easy and delicious but also a perfect balance of flavors and textures. ✨Ingredients:
Ground beef mixture:
* 1 lb lean ground beef
* 1 tbsp olive oil
* 1 small onion, chopped
* 2 cloves garlic, minced
* 1 cup shredded carrots
* 1 cup finely chopped broccoli
* 2 eggs, lightly beaten
✨Sauce mixture:
* 2 tbsp soy sauce
* 1/2 tsp of ground ginger
* 1 tbsp hoisin sauce
* 1 tsp sesame oil
* Salt and pepper, to taste
✨Caramelized onions
* 1 tbsp sugar (for caramelizing onions)
* 1 small onion, finely chopped
✨Toppings/ sides:
* Butterhead or romaine lettuce leaves
* Other optional toppings: chopped green onions, sesame seeds, sriracha
✨Directions:
1. Prepare the Ingredients:
* Wash and dry the lettuce leaves.
* Finely chop the onion and garlic.
* Shred the carrots and chop the broccoli into small pieces.
2. Caramelize the Onions:
* In a skillet, heat olive oil over medium heat.
* Add the finely chopped onion and cook until translucent.
* Sprinkle sugar over the onions and stir well.
* Continue to cook until the onions are golden brown and caramelized. Remove from skillet and set aside.
3. Cook the Ground Beef:
* In the same skillet, add the ground beef.
* Cook over medium heat until browned, breaking it up into small pieces with a spatula.
* Add the chopped onion and cook until soft.
* Add minced garlic and cook for another minute.
4. Add the Eggs and Vegetables:
* Push the ground beef mixture to one side of the skillet.
* Pour the beaten eggs into the empty side and scramble them until fully cooked.
* Mix the scrambled eggs into the ground beef.
* Add shredded carrots and chopped broccoli to the skillet.
* Stir well and cook for about 5-7 minutes until the vegetables are tender. Don’t let them be too soggy.
5. Season the Mixture:
* Add soy sauce, hoisin sauce, ground ginger, and sesame oil into a cup to combine all ingredients together.
* Add cornstarch and water together for a thicker consistency.
* Add and stir well.
* Cook for another 2-3 minutes until everything is well coated and heated through.
* Season with salt and pepper to taste.
6. Assemble the Lettuce Wraps:
* Lay out the lettuce leaves on a plate.
* Spoon the ground beef and vegetable mixture into each leaf.
* Top with caramelized onions and any additional toppings you like.
7. Serve and Enjoy:
* Serve the lettuce wraps immediately and enjoy the easy, flavorful meal!
