Bro, these are big channels. They don't use image based background, they actually create 3D background. They have high end machines. They employ several people to model the scenery. You can also do it, it will just take enormous time. A shortcut would be to purchase 3D models from online store like sketchfab.com or blendermarket.com but I am not sure if that would be economically viable for you unless you already have a large audience.

What happened with you bevel? Did it not yield any result or did it ruin the text? If bevel is not showing, you may need to disable the clamp option under the geometry section within bevel, however that may ruin the text which is what most people experience (one solution to that may be to reduce the bevel amount). The other solution is to create the text itself with some bevel (not bevel modifier). Go to the text tab and under the geometry section use bevel - may be the round option - and use a low value. This will round the edges of your text, however the intersection with the base plate won't be affected. This is a trade off which is at least better than no bevel.

No, xplane flight simulator has its own interface. It won't couple with Blender. The global scenary you get in the flight simulator is hosted on clouds, so you cannot extract it for an external use either. At max you can screen record the scenery 360 degree and convert it into an HDRI image which you can import into Blender. However, it won't be as easy as it sounds.
