You can mix the batter with or without Mixer and It doesnt have Alcohol, i didnt soak the raisins... but incase you want to infuse for alcohol into it.... After baking it, when it cools completely, puck some holes into the cake with skewer, then drizzle some brandy or rum...gradually the alcohol sinks into the cake.
Ingredients i used
2 cups of flour, 1 cup of brown sugar, 1½ cups of raisins, ½ cup of oil, ⅔ cup of milk, 1 tsp of grated ginger, 1 tsp of baking powder, 1 tsp of grated nutmeg, 4 eggs, 1 tsp of flavour ,
115g or ½ cup of margarine or butter ,1 cup.of glace cherries, ½ cup of diced apples,
For the toppings
some dry pineapple slices, some almond and cashew nuts, some cherries, some raisins, some coconut flakes
