One way to simplify this even further: put the last rise on parchment paper and lift the loaf with parchment paper into the baking pot.

I have been making the 5 minute no knead bread for a couple of weeks. It is actually pretty decent. It needs at least 3 days in the fridge to gain flavour and texture. I have baked bread for years and am pretty impressed.

This brought back the first time I made this recipe and had the same reaction. One of the best parts of baking this bread is listening to the crust crackle as it cools. Then, the butter!

What I don't understand is why there is such an abundance of no-knead recipes on the internet. I make bread and one of the best things about making bread is kneading. It is so therapeutic. The dough is warm and soft and silky smooth. You can knead it as long as you like (more therapy) or just enough to expel the CO2 if you don't have much time. I love this part of bread making. I can get my hands messy and be really a part of the process. Please don't deprive new bakers this joy.

Don't put flour in the middle of the dough when folding. The folds should be done with sticky bits of dough. Raw flour in the middle of the dough won't get cooked properly since it's not incorporated in the dough. Don't proof on the bench - makes the bread flat. Put it in some kind of a bowl (in tea towel) so that it holds the shape better. Also, give the dough a good "tuck" a few times so that it holds it's shape. You made it even more flatter than it needed to be by squashing it in your hand to put in the Dutch oven. Transfer to a baking sheet/paper and plop the whole thing in the oven. Also - the bread needed to be baked for longer. The color on the crust is too light.

These are actual valid points. Instead of using “go away” and “it’s false”, try using 8th Grade Maturity and argue instead of providing no evidence at all and using semi-ad hominems

Thank you! I’m making this literally right now (trying to see technique via video) and just got to the final rest & was doing it on the bench, I just ran to the kitchen to put the parchment sling in a bowl instead.

Thanks for the motivation. I baked in parchment sling - dusted off my almost forgotten multipurpose clay baker (romertopf). Oval shape loaf - nice crust - similar result to your bake in dutch oven. Thanks again sir.

I’ve been making this bread since 2008, but Lahey and Bittman put this method out in 2006. It’s a great recipe and I’ve done many variations including sourdough. Great job Scott!

Hey, I noticed the handle on your lid is that black “composite “ stuff, you can cover it with foil to help it last longer or replace it with a stainless one from Le Cruset. That type of handle/ knob tends to break after exposure to oven heat, the fumes are probably unhealthy, too.

Good day, I have seen this recipe by different vloggers for about 4 years now but have never gotten down to baking it. Now is the time to do it as I have no work and due to Covid-19. My dough is actually at its first stage of resting now as I am typing this. What impress me about this bread are the perforated holes and its yellowish interior. I read that this is also the marks of a well-made French baguette. This recipe was publicised by NYT in 2006 and it's sad that New York has taken on a new meaning in recent weeks. May we all stay strong. Thanks for sharing this.

So bloody helpful! I have made this bread resting for both 12 hours and 18 hours (It recommends both in the recipe) and you only get these big bubbles when you let it sit for 18. Also I was stressing about which side the seams were supposed to be, up or down in the oven, but it really doesn't seem like it matters!

I think your flatness comes from over proofing the dough. A 2 hour proof time is a *lot*, especially since the only gluten development you get is from fridge time (no knead).

The cracking of the crust is the crust setting along with the crumb as well. That is why they recommend not cutting until it has cooled down. The airy crumb is from the high hydration of the recipe.

I’m an experience baker from grad school days (so a bit rusty), but I have never been able to get the no-knead bread to work for me. This video is making a world of difference. I’ve watched the Bittman video many times, but I think watching someone make the recipe truly for the first time is far more helpful than watching an experienced chef do it for the 1000th time. I’m still only halfway through the process, but what’s on my kitchen counter looks a lot more like Scott’s, so I’m trusting the process. Oh, and can we wonder just how it is that Scott has such an amazing kitchen? I’m in the Midwest and my counter space is a fraction of what he’s working with. I wish I could watch someone juggle balancing a cutting board over the sink and letting dough rise on top of the dryer. Alison Roman’s Thanksgiving dinner is the closest to real in that regard. Anyway, yes, please do more of these, even after we are all together again.

In some cultures, you would be good to get married now that you know how to make bread. It looks amazing! Congrats! On your question about the bread making noises...just like coffee beans, the wheat continues to bake outside the oven until cooling down. That's why the process needs to be let to go on until finished. Your bread looks amazing but the Dutch oven needs a good scrub ;) Try the Zepter cooking pots, they're much easier to clean! Also, the bread knife would be a good tool in any kitchen where you bake bread, Scott. You nailed the crust, that would be the first pleasure in eating the bread. I love the recipe, and will certainly try it. The leven makes the holes. Way to go!

Try placing the bread on parchment paper with the final rise. This will make it much easier and safer to transfer the bread in to your preheated Dutch oven. I do this all the time 🥰

if you score the top of the bread it helps steam escape and your bread will rise a bit more

would the recipe work the same with Gluten free flour?

What if I use an oval dutch oven? I have a le creuset 8qt oval (number on the bottom is #33), not a round one. I also have a 4.5 qt round one, but I'm afraid it might be to small... Please help! I'm already resting the dough (almost at step 2 of the recipe).

Small is good, because it helps the bread rise UP instead of all around. If you think it's too small divide into two. I divided my dough into two and baked in a small pan, it helped with the rising/oven spring. I found smaller is much better for a poofed bread, upwards not sideways, specially if you're trying the wholewheat version. It was glorious.
