Easy Overnight Focaccia Tutorial (uses instant yeast)

This is my VIRAL focaccia recipe! So many people say they've had success using this method and recipe to make focaccia at home. They are also shocked by how incredibly simple it is!
The secret ingredient for this recipe is time. You don’t spend much time actually mixing/handling the dough, but it does spend a considerable amount of time slowing rising in the fridge. This adds to the flavour and the consistency of the focaccia and I promise it’s worth the planning ahead!

Measurements:
500g bread flour
420ml slightly warm water
4g (1 teaspoon) instant yeast
15ml (1 Tablespoon) extra virgin olive oil plus more for pan + to top bread
5g (1 teaspoon) honey
10g (2 teaspoons) fine sea salt
Baking tray dimensions:
9x13inch (23x33cm) metal baking tray
Proof in fridge for 18-48 hours before placing dough in tray to proof for another 2 hours at room temperature before baking.
Bake at 220C/430F on bottom rack of oven for 18-22 minutes, or as long as it needs to reach a deep golden brown. Baking at the bottom of the oven helps to ensure the bottom of the focaccia crisps up. If you have a gas oven with heating element at the bottom, then bake in mid to upper rack.

I made your focaccia today, I did maybe 12 hrs, it was so delicious I ate 1/2 by myself thank you so much, it’s not as complicated as it seems, I made regular bread it was a disaster, this is so easy nothing difficult at all💖💖💖💖💖

Where you live and humidity can change cooking time. Next time try 440-450F. I’ve done focaccia at 450-500 for 15-20 minutes and the cheese/toppings were fine. Make sure you take it out the pan when it is done or it will sweat the bottom, unless you like it that way.

Apparently this time around I didn't oil my pan good enough because the bread stuck to it! When I tried to take the bread off after ten minutes, I ripped the bread all across the bottom BUT, it still tasted good!

There should be 1 T of extra virgin olive oil added to the water as stated in her recipe on Instagram. I think it was forgotten in this recipe.

Lacy-which setting do you use on your oven. I have a European Oven and use the option that has a line above and below without the fan. Thank you for the recipe.

Quick question for you regarding focaccias... DMed this to you on IG as well. Can ingredients live cheese or curry paste or jalapenos or olives be folded into the dough instead of inserted in like you show after the proofing is done, laid out and pinched in some of your other videos?

Hello! I'm not sure if I replied to you on Insta or not yet, but usually these types of things in dough can get in the way of the development of gluten which is crucial for holding all those lovely bubbles. They can also change the levels of salt in the dough which can disrupt how the yeast works. That being said, if you'd like to try it and are happy with a somewhat flatter focaccia, feel free to fold these ingredients in during the first stretch and fold phase. So sprinkle onto dough, stretch dough over, sprinkle a little more, stretch etc. They will mostly be incorporated by the time you're done with the second set of stretch and folds!

I did this last nite but it's taking longer than 2 hrs to come to room temp. Should I just go ahead and bake or wait?

Mine didn't raise during the 2 hr room temp proof - it was still tasty but flat. Any ideas why?

Hmm, it shouldn't necessarily rise much but it should definitely spread to nearly fit into the pan. A few questions come to mind when someone mentions a flat focaccia - was your yeast instant yeast and within expiry date/recently opened? What what the temp in your home like when you were proofing? If it was very cold, then your focaccia might need a longer proof before baking or place it somewhere warmer in your house. Last question is tray size - sometimes people bake their focaccias in trays much larger than mine (9x13) and they will naturally spread out and bake a lot flatter. Oh and flour can be the issue too, if you're not using bread flour with more than 12% protein, the flour might not be able to hold in the bubbles very well (ie if someone used all purpose it will usually bake up flatter!). It may be one of these things or a combo...I hope this helps you to troubleshoot!

When I did my foccacia for the first time, I left it rise before baking for 2 hours, like its written in the recipe, and It was a little flat as well. For the second time making foccacia, I left it rise for 5 hours and it was 100 times better, and very risen. Air bubbles were HUGE😅😜 my advice

using metric and a scale is more accurate than measuring in cups. It is also easier to establish hydration % which is always calculated using weights. Since 1 ml water equals 1 gram, this recipe uses 420g water and 500g flour - 420/500 equals 84%.for a wet dough but not impossible to work with.

This is great Lacey thanks. I've been making focaccia for years but I saw this on instagram and have to give it a go - it's pretty similar but slower and your results look amazing! I've subbed to your channel - please don't be discouraged by your two long form videos not going viral, your content will take off big time here on youtube, it's so much better for tutorials like this than IG.
