I made these tonight. They were great. But I had to move to frying pan on high to get a little char. I add Chinese chili crisp oil to mine. Love your recipes.

I’m making chicken fajitas tonight. Maybe I’ll try this. Since I’m diabetic, I will be putting mine over some cauliflower rice. More like a bowl. I have avocado and radishes I can top with.

Lady Mama you are such a an excellent cook. Everything you cook looks so delicious and you do a fantastic job of explaining what you're doing. I second the cookbook idea. I don't know how many recipes of hers I have typed up titled "Angelica's ________________" in my spiral notebook recipe book. I'd certainly buy a cookbook with her recipes to add to my collection. And I have a feeling it would become one of my most used cookbooks.
Hi it depends on how thick or thin your chicken is. Times will vary. To make sure your chicken is cooked you can use a thermometer. Chicken is cooked at 165 degrees.

I was planning on cooking chicken fajitas yesterday anyway before I saw your video. My store didn’t have the frozen chicken breast I usually buy and I decided to try their tenders. For seasoning, I did what I had in my cupboard. Next time I need to add something that will give it a spicy kick. I put parchment paper on my pan, piled the veggies on that and then put the olive oil, tossed all together. Put the whole tenders on top of the veggies. I cooked everything for 10 mins but needed to add 2 more mins to my time. After letting it sit for around 10 mins or so, I sliced the tenders. I could tell when slicing that the chicken was moist and when we ate it, omg, the moistest chicken I’ve ever had. Even the hubby agreed. Not only will I be buying tenders from now on, but I will bake my chicken fajitas. I wonder if you can do shrimp fajitas the same and what the bake time would be so the shrimp doesn’t overcook?

These are FANTASTIC Angelica! Everything is very easy to make. I did cut my chicken up into strips ... I figured the marinade would have more surface area to penetrate and it would marinate more quickly. And it did. Just great flavor. The rice is very good too and so easy. This is what I love about your cooking. You cook like, well, a busy mom who needs to get a meal on the table quickly. But your recipes, while staying simple and easy to make, are creative in their seasoning and flavor. Thanks for another great recipe!
