Rachel, you are so delightful. For the last 20 years I have not cooked very much. My husband left me after 23 years and of course my daughter is a wonderful woman with a family of her own. So, It is hard for me to get excited about cooking for one. But you have lit the fire under me so I am inspired. I have to start all over. Today I bought knives, 2 sizes of Dutch ovens some storage containers and some spices. It will take a while to accumulate the things I think I will need since I am on a fixed income. But thanks to you, I have found a new hobby. Any suggestions would be appreciated. God bless you, Evie

I made these last evening and OMGoodness Rachel, these were so amazing! I have a favorite Mexican restaurant and these were way better, I think a lot of it is the seasoning you use and the love which is an ingredient also. Using the same cheese also makes a difference. Hi Rachel, I made chicken fajitas for dinner tonight using your recipe. The fajitas were so flavorful with the different seasonings and the orange and lemon juice. They were very easy to prepare. I used queso fresco instead of the Oaxaca cheese (I didn’t have any) and they were still super delicious. Thank you for this recipe and God bless you and Ron.😊

We do fajitas nearly the same! I like to use a mix of chicken breast strips, & sliced petite sirloin. Also, I like fresh minced garlic in the meat marinade. They are delicious.
