Easy Spicy Ketchup Recipe

In this video I show you my recipe to make your own chilli ketchup! (If you want plain ketchup without the spice then you can leave out the birds eye peppers. At the same time if you want it hotter then add more peppers...or hotter peppers!)
Making your OWN ketchup means you get to control what goes into it...so if you want to reduce the amount of sugar in your diet, but still want to enjoy ketchup, then make your own! Plus this just tastes incredible!

Ingredients:
1.2 KG Plum Tomatoes
3 Tins plum tomatoes(or another 1.2KG of fresh plum tomatoes)
6 Jalapenos (4 red, 2 green)
25-30 Birds Eye Chillis
2x Red Onions
8 Cloves of Garlic
Piece of Ginger (a bit smaller than golf ball sized)
Piece of Fresh Fennel (about half a fennel bulb)
3x Celery sticks
1 tbsp Dried Coriander Seeds
1 tbsp Pepper Corns
1.5 tbsp Salt
150g Brown Sugar (or equivalent sweetener)
350ml Red Wine Vinegar
Handful of Fresh Basil
1 litre of water (less if you want this to cook down quicker)

I do the same thing using my smoker. Instead of using tomato for filler, I use capsicum. For sweetner I use honey and two granny smith apples. For the vinigar I use apple cider vinigar. For the oil I use coconut oil as it Is a fantastic natural flavour enhancer. The men at work are always asking me when I'm making my next batch. Love your stuff mate, keep it up!

Coconut oil acts as an amazing preservative as well due to its antifungal and anti bacterial properties

@@hazelstratum try to oil a knife, or metal that you dont want to rust. In less then a year all of my hunting knifes smelled horrible. they were not used knifes only one season to the next. it was bad enough that even though i needed to use them at deer camp the next year for for a harvest. I ended up using the cheap kitchen knives in the camper to do what i had to. to get the knifes to even smell right (not on the handle smell) 24 hr soak in vinegar.

@@dustinallred8782 Animal and plant fats spoils and goes rancid after a while, use mineral oil or wax if you're not going to use a tool for a while.

Thank you Anders! That means a lot. I believe in the saying "dress for the job you want, not the job you have"...so I treat my channel and videos as if I was a much bigger channel. I am still trying to improve all the time, and even looking back at videos I did a year ago I can see the improvements I have made!

I made this a couple of months ago and today was my 75th birthday, so I gave my children all a bottle each and opened one of mine to try. DELICIOUS!!! The kids all said make more Ma, so as we have buckets of chillies, red onions and tomatoes and I am sooo sick of making chilli jam that they all love I’m about to make a double lot. Not enough tomatoes to can, too many to eat. What to do? Spicy ketchup!!!!!! It is AMAZING! I used the peppers I had~ Aji Rico, jalapeños and one red Monzano pepper. I used my sandwich slicer tomatoes since I didn’t have the sauce tomatoes. It didn’t matter, it thickened up perfectly. I didn’t use fennel. The finished product is so delicious! A little sweet with a spicy finish. Thank you CC! As always, your recipes are the best. Love your book. People that don’t have it, should get it.

First recipe I ever try from ChilliChump. I had to substitute a few things. I used fermented cherry tomatoes for all tomatoes, so I omitted the salt. The public market bought so called piri piri chillies where not as hot as my home grown regular Cayenne peppers. Something was wrong about them. So I added 1.4 grams of fresh Trinidad Moruga Scorpion Butch T., for the extra sting. Did not change anything else. I was tuned on Frank Zappa when I home canned it in 1 cup (250 ml) jars. I labelled the jars as “Poodle bite hot chilli ketchup”, because that’s Dirty Love ! Thanks ChilliChump !

Thanks for the great vids. I got started fermenting peppers and am hooked. I found Rocoto peppers and they are my favorites so far. Very fruity and the yellow ones are pretty spicy. I add some Carolina Reapers to get the heat up and might add a green Cardamom seed to add to the flavor. If you haven't tried these, I highly recommend them. The sauce has a very fruity flavor that is superb. My 12 year old son pours this stuff on everything. I also use orange, red and yellow bell peppers to change the colors in my mixes. They have slightly different flavor profiles which add a nice touch. The key is fermentation and anyone who hasn't tried it needs to. Thanks again.

Late to the party but I made something similar with leftover pickled hot peppers after watching this video. Fewer aromatics and less salt but I also added anchovy-based fish sauce and whole pimento/allspice. I think a fish or soy or bean sauce/paste is a nice shortcut to get that depth of flavour that only fermentation can provide. And an allspice habanero scotch bonnet combination is borrowed from West Indian cuisine, it never fails. Time to binge-watch the rest of your stuff!

Nice thing that we saw your small smoke box, some inspiration for those on a strict budget. In India the ladies place the items to be smoked (say 3 to 4 boiled potatoes) in a metal bowl or utensil, leaving a void or gap in the centre. A burning coal/coals are placed in this area and ghee(clarified butter) is spooned on to them. A simple lid is used to cover this for around 5 minutes or so!

I'd recommend adding some cloves to the recipe too - even if you think you don't like them, they add a really rich savoury flavour that goes really well with the tomatoes.

I just finished mine. It's perfect. I put only chillies (20) and because I can't smoke them, I passed them through the BBQ for little while until they take some colour. All the rest as you say. I don't have a slow cooker so it took me 4 hours in medium- low heat and lower at the last hour,to reduce it. It's perfect. It's spicy enough but not too hot. Excellent. I got almost the amount you got (1,2 lt) and I have 3,85ph. Perfect all the way. Thanks for the recipe.

A tip for your subscribers. A smoker box can be made with a couple of tin cans or one tin can and aluminum foil. The tin cans can't have a coating on the inside. You have to know how to handle a drill. But it isn't that hard. Also store bought liquid smoke works well. Thats a lovely barbecue.😊

Great videos...love the content! I used basically the same recipe except half of my tomatoes were roasted, and I added a few cloves of garlic to my tomatoes when I roasted them. Turned out fabulous. Based on the reactions from my family and friends, I will be making quite a bit of this next time!

A few weeks ago, I started trying to make fermented ketchup. Tomatoes and jalapenos. I don't know how far it strays from tradition, but I'm hoping for the best. I smelled it the other day, and it smells pretty good.

I grow tomatoes in addition to peppers in my greenhouse so always have a lot on hand to make things with. I would 100% recommend that anyone making sauces, passata , jams and relishes or anything like this where you need a smooth, seedless and sieved sauce that a food mill is great (vs a sieve). Great channel btw.

got my ketchup mix in the crockpot now can't wait to try it out. couldn't find fennel or coriander seeds so I used cilantro and left out the fennel and added a little extra vinegar

iam so glad i found your channel! I loaded up 6.5kg of tomatoes self grown into big pots and tomorrow i will make them into ketchup! i will make 3.2kg with chillies and 3.2kg without chillies because iam the only one in my household that likes spicey food. sadly i dont have a slow cooker so i will have to do this the hard way.

I made the Chili Ketchup and I think I went a bit overboard on the amount of chili peppers, adding more and hotter peppers. I must say, it turned out to be heavenly delicious and hellishly hot. I gave a bottle each to two friends and now they say they want more and are even willing to pay for it. Great stuff.

yes spicy ketchup IS EXCELLENT I LOVE IT GR8 CHOICE! I LOVE JALAPENO'S FAVORS i dehydrate my peppers into a Jalapeno powder Or roast em in the oven and dry out . grind up is called TEXAS GUN POWDER > This is what i sprinkle on JUST ABOUT EVERY THING YUM fried eggs just about every thing > Yes even in spaghetti sauce

This is an Incredible Sauce! It's way more than Ketchup - I use it on everything, and have been known to just eat it with chips as a dip late at night. Today, for my second attempt, after smoking the Peppers, Onions and Tomatoes, I added Gochujang to achieve additional depth of flavor. Thank you so much for doing these videos. Apart from your excellent photography and technical presentation, you have become my "Go-To" Instructor for all things containing Capsaicin. You are my Hot Sauce Hero...

I don't know where you live - thought it was Australia due to the accent, but in this video you mention a "Wet UK long weekend." Regardless, I'm in Houston Texas - one would think the home of Hot Sauces, but your recipes outdo anything I can find. I struggle a bit with the fermented recipes, but hope to develop a Piri-Piri sauce for my Brasilian wife. Best, Scott

Great vids man. Appreciate all the great info and advice. I will be doing this in my pellet smoker in a cast iron Dutch oven, I cant wait! You should look in getting a high powered blender like a Vitamix. It's a game changer. Thanks again for all your great videos.

I recommend a Vitamix blender . They are pricey but worth every Quid!!!

Build a cold smoker, great for so may food uses. I could not live without mine and so cheap and easy to build.

Thank you for the video. I have just finished making it. Tastes really nice although I have not smoken jelapenos and added no other hot peppers - my family does not like hot souces :)

It is my pleasure. I will be making more of this soon, my family really likes it too (they prefer it to the store bought!). I might make two different ones...one with just a little pepper heat, and one with quite a bit of heat!

Hey Chillichump....I’ve have been binge watching your videos...great channel....I was born in Manchester, raised in Canada and now live in Texas...a smoker or a pellet grill would be a great addition to your backyard...in the mean time might I suggest an “a maze n” pellet tube and a “frog mat” for use on your Weber grill for smoking all kinds of things, both available online....keep up the great work.

Looking good! I would de-seed the tomatoes. The seeds release a bitter flavour when blitzed in a blender. Other than that I will definitely try.

I feel like I saw 4 different things I can get out of this ketchup recipe (just adjust the amounts) 1. Spicy Ketchup 2. Marinara Sauce 3. Pizza Sauce 4. Spagetti Sauce And Im pretty sure other people could find more..

Love this recipe! Another great video. I will be making this for sure when all my peppers and tomatoes are ripe this year! The slow cooker is a great idea. I might try roasting the peppers first and then try the smoked ones and make two batches to compare the taste.

I've been making home made ketchup for some time now. I usually bake my tomatoes and habaneros and add 1/4 of a Camden tablet (the tabs used to dechlorinate home brewed beer) for every 2 cups of vinegar. I've found that the sugar in the sauce allows yeasts to proliferate and as they ferment the sugars, the ethanol dilutes the capsaicin. Suphites in the tab keep yeasts from growing ang keep the sauce spicy longer.

@@ChilliChump when my uncle went away on combat ops he would always make sure he had curry powder & home made tabasco sauce with him. He learnt how to make it from my nan who was a chilli legend when she was still with us. 👍

Stumbled onto your channel quite by accident while viewing some videos for some additional tips on making hot sauce (I've always made my own as I cannot stand store bought; it's never as tasty and certainly not hot enough for my tastes). Anyway, love the two videos of yours I've watched so far and have not subscribed. Will be watching the rest of your published videos over the course of the coming weeks. Keep up the great work, buddy. (BTW, I'm a native from New Mexico here in the states. If there's one thing we seem to know, it's our peppers. I was cracking up as you did the taste taste on your weapons grade hot sauce. I've had a few moments like that over the course of my life.)

I'm going to try this recipe today. I have a bunch of red chilies that are not too hot for flavor and some habenaros for heat. I'm not going to add tomatoes. Usually store bought tomatoes were picked when they were green and refrigerated on their way to the city. They do not have a lot of flavor. Instead I'll use san marzano tomatoes, because they are perfectly ripen when they are picked and canned right away. I do like the idea of the fennel, I think it will add a ''je ne sais quoi'' to the ketchup. I think it is a flavor note that is different and it adds to the complexity of the flavor. Usually I would had a clove in my ketchup. Cloves is to ketchup what fennel is to sausages and paprika is to BBQ sauce. It is the signature taste of that food. but I'll try without this time to see the difference. I live in an apartment in the city and I have nowhere to put a BBQ, so I will improvise by adding 1 or 2 drops of liquid smoke. Not enough for people to identify the smoke, but enough to add some depth to the ketchup. I cant wait to taste the result. =D
