A secret from my grandmother who was 100 percent Italian. She used fresh carrots in her sauce instead of sugar. They produce so much sweetness and you don’t have to use sugar. ❤️ Great video!

​@@cathy3951No Italian Grandma, but I have seen some peel and plop the whole carrots in. And others' mince the carrots and leave them in their final product. I believe that that way would require pressure canning. Plenty of Italian Grandma's recipes on the tube.

The tomatoe water can become a white tomatoe soup. I just recently tried it and it's amazing! Btw, I am also a no recipe gal. 😅

If you peel your tomatoes when canning, save them. Dry and powder them. Instead of tomato paste, take a couple of tablespoons of powder, add water and let sit until it thickens. Add it to your recipe.

If you are concerned about the sugar content in these recipes, you are very welcome to cut the sugar back to your personal taste! I have people asking me, “Do you have recipes for barbecue sauce and ketchup that are actually good?” The people that ask the question in this way are most likely wanting sauce recipes that taste as close to store-bought as possible😉 So I created these recipes with deep, rich, full flavors… which requires sugar. If you are one of those folks who would rather have a low sugar sauce, feel free to adjust the sugar accordingly. It will not harm the recipes at all! Also, sorry if you were expecting full out canning instructions (canning times, etc.). You will always get haters. Even the Amish get haters. I love water bath canning. It's how my mom did it how her mom did it. Now I'm doing it. Keep canning. Love your videos. And I would've loved to know how much time for water bath. Thank you

I cook the same way. I can the same way. I do follow salsa percentages of vinegar just in case. Actually I blend my skin and seeds up too. Love your video

I wonder if I can make these sauces using canned tomato products (minced, pulped, quartered, etc.). My husband bought insane amount of canned tomatoes during covid lockdown, and I'm afraid they're going to eat through the cans and leak all over, and I don't want to waste them either.

Love this video! No need to waste the tomato water either. The way you do your tomatoes gives you a whole new value added product! I can up that tomato water and use it in soups or to make rice. Getting ready to add some to a batch of vegetable beef soup tomorrow. :)

One year I had a bumper crop of peaches. After so many jars of jams and cut peaches, I tried peach bar BQ sauce and peach salsa. I just added peaches to my favorite recipes. They were delicious.

I just planted apple trees all along our garden, and edge of property. I'm hoping that we get a bunch of apples in a few years, but peaches would be nice, too!

I make my smokey tomato flavored sauces by smoking some of my tomatoes. I then process those as it's own 'sauce' and then can add it to my enchilada sauce, BBQ sauce & chili. Super easy and no fake smoke stuff. It's even easier when the hubby is in charge of smoking. Sending support, love, and kindness from Lexington, Michigan, USA

I love this idea! I smoke salt in the smoker whenever my husband is smoking something and then I have “ smoke “. I will try this. It makes sense, it’s like charring peppers.

This is probably the best tomato processing technique I've ever seen. It's really simple and even yields a tasty byproduct. Fantastic video!! If only all food vids were as informative. Wonderful content.

Love the frozen tomato shortcut! I’ll try that in July! Last year I made roasted spaghetti sauce from watching another you tuber ( living traditions homestead)-and Sarah was roasting her tomatoes to can but I took it a step further and roasted everything that I would typically use in my sauce; tomatoes , peppers, onions, garlic, all the seasonings, and a little olive oil… I’d sprinkle a tablespoon of sugar over the whole roasting pan and when they cooked down in about 90 minutes, I used a slotted spoon to lift out the roasted vegetables. I put them right in my Vitamix, like Sarah was doing in her video. You can put hot liquids in a Vitamix. Because I used the slotted spoon, I left behind all the watery tomato juice that you were showing came out of your frozen ones. I would cook everything lightly depending on if it needed to thicken and like you, I would toss in a can of tomato paste if needed before I processed . Sooooooo delicious! Summer in a jar!!

I’ve just started watching but you both have a real natural way around the camera and are good teachers as well. Love your video! I'm 66 yrs & have been canning for a while, I love tomato canning season. I just recently learned that instead of using tomato paste for thickening, to use apples. You just core them, give a rough chop, skin on & run it through your blender to puree. It worked beautifully as a thickener & I could cut back on sugar since the apple also added sweetness. Also, I added Worcestershire sauce for depth in taste, another new trick that I added to ALL my tomato canning recipes this year. So much good taste & fun times!

Ive just been watching a few of your videos, think you popped up because i watch a lot of homestead videos and small garden growing vegetables. Wow you both have achieved so much in such a short time. When we thicken up sauce we make a roux just flour and whatever liquid u use or water. And if the sauce gets lumpy just take it of the heat no more lumps😊

I do the same thing. I pick my tomatoes just prior to full ripen. That way more tomatoes have the energy the rip ones took. The best blender is a Vitamix. It blends skin and seeds. Great content!!!!! You are absolutely adorable!!! Don't worry.....I'm a grandma. Not hitting on you. Lol

Consider canning your “tomato water” separately. It’s great for adding flavor to soups, rice, pasta sauces without being a full-on tomato base. Like a tomato broth, basically. I pressure can it.

I’ve been wanting to try to can beans with the tomato juice since I thought of the idea last winter. So now I’m pressure canning the bean in tomato juice and water bathing the purée tomatoes! :) keep up the great videos because your helping many folks!! ❤

Instead of tomato paste I use tomato powder from my dehydrated tomatoes. It adds an awesome fresh tomato flavor. I love your channel.

I’m allergic to corn wheat sugar and seed oils and many additives so I’m so excited to find your recipes. I’m also growing in containers because of living in a neighborhood hoa and limited space. Raised beds and fabric bags are working well and inexpensive compared to organic produce

Hey guys my husband and I live in Australia and we have just found your channel. We have been binge watching your videos every night and love the way in which you share and teach from experience. We have just purchased our property and are getting ready to start preserving our foods I’ve found this video so helpful. One question when cooking up batches of sauces etc what size stock pot would you recommend? Does the quality of the pot make a big difference? Thanks so much for sharing all you do. Bless you guys

So excited to have you in our community! As for a stock pot to make sauces, I would definitely recommend using stainless steel because it will help you get around so many toxins in other cookware. I have a 3 gallon stock pot that is my all-time favorite.

Yes... same comment... add carrots which add sweetness and pull out bitterness. You can add them whole and remove when sauce is cooked down.

I’m a new subscriber and I’m new to canning. I had reservations about canning because my family and I are more of clean eaters and I use alternatives to sugar and watch for dyes, preservatives, etc. I love that you can and cook with the health of your family in mind. Also, I tried to make tomato paste this week and it didn’t turn out well. I lost 10lbs of tomatoes 😢. So I have to agree with you about sticking to store bought.

That's one of the main reasons we started homesteading, and now we're happy to help people like you get started! That's a real bummer about those tomatoes. It's hard to see that happen when you put so much work into something. We've had lots of "failures" like that. But, as cheesy as it sounds, we always learn from those mistakes and we keep getting better. Michelle's first sauces didn't taste like this 😉 Blessings on your journey!

Thanks for the recipes! Today I made the ketchup (I'm a big ketchup lover) and it's super tasty! I had to do some maths to get to the European measurements, but it worked out well! Now we have enough for the rest of the year! Love from Romania ❤

I was hust looking for a good bbq sauce recipe! I love your videos. Have you ever tried charring your tomatoes on the grill? This lets the water separate also and gives out of this world flavor. Once they're charred you can pour the water off, run them through the processor and then through the seive. Gets the seeds and skins out and leaves fantastic flavor behind.

Thank you for these great suggestions. The BBQ SAUCE seems like an easy and customizable. Just imagine adding soy sauce and chinses 5 spice for an ASIAN BBQ SAUCE or adding Ancho and Chipotle spices for a TexMex style BBQ SAUCE? OR adding Calabria chilis fir a SPICY marinara. These recipes are GREAT and customizable. THANK YOU

I love your background music reminiscent to Zach-Brown's band " into the mystic ", and other lovely positive music bits along the way. Lovely cooking video with useful and awesome healthy information. Nobody likes soggy buns. I love ketchup . You need to start up natural sauces to sell in stores ( make the big- box stores better for all of us ) . Exceptional job explaining all of the steps to make these lovely and tasty sauces.
