These are great for Valentine's Day treats. I use strawberry cake mix for this recipe.
Ingredients:
1 box strawberry cake mix
2 large eggs
1/3 cup vegetable oil or melted butter
1/2 cup strawberry yogurt
Filling:
Vanilla Frosting or any other frosting as desired. (Or use it to frost the entire mini heart cake if wanted.)
White Chocolate Ganache: if used to coat mini heart cake.
10-12 oz. white chocolate wafers
1/4 cup heavy cream, more or less as needed
Melt white chocolate with heavy cream in a microwave on low power in 30 seconds intervals. Stir until smooth.
Method:
1. Mix cake mix, eggs, and oil together until well blended. Then mix in yogurt until incorporated.
2. Scoop the batter with a 1" dia. ice cream scoop to a lined baking sheet about 2" apart.
3. Bake at 350 deg. F. for 10 minutes or until firm. Let stand in the pan for 10 minutes before removing them to a wire rack to cool completely.
4. For the mini heart shape cake, greased the hart shape pan with baking spray. Fill the pan about 1/2 way full in each chamber.
5. Bake at 350 deg. F for 15-18 minutes. Let cool down for 5 minutes before inverting the cake to a wire rack to cool completely.
6. Sandwich the two cookies with frosting to make whoopie pies. Ice the heart shape cake with frosting and decorate as desired.
7. Here I use white chocolate ganache to cover the heart shape cake and then decorate it with royal icing.
