Hey everyone! This week's recipe is a quick and easy traditional Thai Green Curry. We’ll be making our own curry paste from scratch, which is far better than any store-bought version. Paired perfectly with coconut rice, this dish is a flavorful and satisfying meal you can easily make at home.
Ingredients:
Curry Paste
1 tsp sea salt
10 green chilies
3 tbsp Ginger
1 lemongrass stalk
3 coriander Stem
4 shallots
1 garlic clove
1 tsp shrimp paste
1 tbsp coriander seeds, ground
1 tsp cumin seeds, ground
1 tsp black pepper
1 tsp salt
Chicken Curry:
450g chicken breast, cut into bite-sized pieces
homemade green curry paste
400ml coconut milk
1 cup chicken broth or water
1-2 tbsp fish sauce
1 tbsp palm sugar or brown sugar
1-2 kaffir lime leaves, torn into pieces (optional)
1 cup green beans
Fresh Thai basil leaves, for garnish
Fried Shallots, for garnish
Coconut Rice:
1 cup jasmine rice
1 cup coconut milk
1 cup water
1/2 tsp salt
1 tbsp sugar (optional)
