Hi Everyone, Welcome to another episode of Foodie Pinoy. Today were going to cook a popular pasta dish loved by Filipinos and often serve during celebrations - Filipino Style Creamy Carbonara.
The whole point of carbonara is the magic of egg yolks and pasta water. It would be like adding cream to a congee "Because it's creamy right?!". Carbonara is creamy because the egg yolks and water emulsify creating a creamy texture. Just call it ham and cream pasta and no one would complain. Also one of the crucial ingredients is black pepper - the carbon in carbonara (so how some stories go).
Correct, The traditional Italian carbonara only uses eggs to make the sauce creamy. Hence I mentioned in the title that this is a "Filipino style carbonara" which favors the sweeter side. no disrespect to our italian brothers 😉
