Hey Guys today we finally learn to make Grenadine. This has been a highly requested episode so hope you guys dig it. It takes you through the process start to finish so it a bit of a longer episode and we do make Grenadine from scratch.
If you are watching outside of Pomegranate season which runs October through February, just make sure that you use 100% Pomegranate Juice not from concentrate and if you need Pomegranate molasses you can find that here: amzn.to/2z4TFLV
Here are the recipes Written out:
For Pomegranate Molasses:
4 Cups (946ml) Pomegranate Juice
3 Cups (603g) Cane Sugar
2 Tbsp Lemon Juice
For Grenadine:
In a saucepan combine 4 cups (946ml) of organic, unfiltered, unsweetened pomegranate juice and 3 cups of organic (cane) sugar. Place over medium heat, stirring constantly and without bringing to a boil, until the sugar is dissolved. I make sure I don'r even simmer it, I just make the juice hot, you do not want to burn anything. Stir in 6oz (180ml) of pomegranate molasses and combine. Lasts two weeks in the fridge.

there's something really creepy about the long silent pauses of you stirring the mixture with black gloves. It looks like a shot of hannibal like you're stirring blood or something

Hey the recipe for the molasses in the description doesnt match the recipe you stated in the video. In the video you said for half batch use 2 cups of pomegranate juice, 1/4 cup of sugar, and 1Tbsp lemon juice. In the description it states 4 cups pomegranate juice (2x2=4), 2Tbsp Lemon Juice (1x2=2), and 3 cups sugar (0.25x2=.5 not 3) Which is the correct amount of sugar? Half cup sugar for a full batch or 3 cups of sugar?

You provide the BEST real time instructions. I have been making grenadine for a decade, but I know this year will be the BEST. I got 35 pieces of fruit this year. After three separate days of collecting three large bowls of arils, they produced a gallon of juice from 30 with the help of Joe Cross. I appreciate your molasses instructions & will make my own molasses with the remaining pomegranates. ty. From my pomegranate tree to under the Christmas tree ...as my annual gift to some special people... I am more anxious to give my Grenadine gifts this year. watching so many of your videos makes me wonder all sorts of stuff relative to how cocktail ideas emerge. Like for instance, if you can make anything into a syrup just by adding sugar.. could you take rose water, then ''syrup'' it - then make something out of that. One bar in town here - made there signature drink something that contains rhubarb purée. It's great - really inspired.

Hi Leandro, I attemped to make both the pom molasses and the grenadine a few months ago and the color was not as red and vibrant as your version on this video. It's a lot of work as you know and so I am wondering what some of your preferred brands of store bought grenadine are as an alternative?

Much love to your work, here, guys. My recommendations are filled with your videos and I watch at least one video a day. I have hit that bell. I appreciate everything about this channel: the 'what you see is what you get' aesthetic, the historical explanations, the straight-forward step-by-step instructions. Leandro is charismatic, at ease in front of the camera, and confidently knowledgeable about the topic. I'm trying to figure out why this channel is not more popular. After more reflection than would make sense, I'm going to pin it down to editing. I think it would enhance the video to have more cutting, in my opinion. Looking for accidentally missing things, for instance: it's not a big deal to the audience, and it breaks the flow of the video. Fun to have it in there, but maybe cut the entire search? I could imagine a new viewer clicking away at those points. Or this video, for a major example, where we literally watch Leandro stir for 3 full, solid minutes. This is sincerely said with appreciation, and if it's helpful, awesome. If it confuses, confounds or even annoys, please ignore the feedback! Your channel is great, and I want to see more!

For us metric folk who to make the pomegranate molassas(or however it's spelled lol) 2cups pomegranate = 473ml (around 0.5 liter) 1/4 cup sugar = 59ml (around 6 cl)

Great Grenadine recipe if you have the time for the prep. Now, let's say you don't have time to do this and you can't buy Grenadine, but you have guests coming in a half hour. (or you noticed after the liquor store is closed that your Grenadine went south and is unusable, or mid party you have run out). Here is a quick and low class way that I make something that is Grenadine-adjacent for passable backyard Tequila Sunrises and stuff. 1. Make simple syrup. (If you also need simple syrup you should reserve half of it now in a seperate bottle for cocktails that need it.) 2. Grab a bottle of store pomegranate juice (like POM which is actually in some gas stations these days). Add it to your syrup. Your ratio is about 1:1. 3. Reduce it down again until you have good consistancy but before it turns to molasses. 4. Bottle and chill. 5. Save Grenadine cocktails for later rounds. 6. Come clean if your guests notice. What you have just made is NOT Grenadine. It is... pomegranate syrup at best, but it works in a pinch and is forgivable in a home setting with no notice or a night alone when you are being lazy and cheap.

That’s not grenadine, more like pomegranate syrup, I'd say it's less complex but passable, probably better than Rose's lmao If your work is a bar, I hope your drinks are cheap or you're basically robbing your customers. If it's openly a trashy club where people just get drunk on vodka and artificially coloured syrup, they don't give shit

A much easier way to get the aerials out is to top it, about 1/4-1/2 inch down then cut along the lines you see. It will look like five point start from the top. Simply cut along the lines of membrane and you'll get five pieces that are easier to seed without getting much membrane with the seeds.

Best way to get a pomegranate seeded is to score along the ridges, cut out the flower spot, then crack it apart and proceed to crack into pieces as able and pull the seeds off with ease.

If you have a fairly high powered blender you don't need to heat anything to make your syrups. Just throw everything in the Vitamix and blend on high until it dissolves. If you want to go even further, replace just a bit of the sugar with glucose syrup (or another invert sugar) to prevent crystallization. And if you really want to go all out (and I usually do because I don't go through the syrups that fast) you can add a bit of potassium sorbate and/or sodium benzoate and they'll last in the fridge indefinitely.

My father when to Greece about a year or two ago while he was there dad noticed that they treat pomegranates like Oranges. When extracting juices the people in Greece where he stayed cut the pomegranates in half and pressed them through an orange press.

Probably done quicker and less fussy in a sauce pan instead of a frying pan. That way you can stir more aggressively and get the sugar dissolved and the pom molasses incorporated with less chance of spills. And it would make the pouring easier also, even though you managed that without a spill.

The video description says 4 cups of juice are needed to make the molasses and it says that 4 cups are 240ml but wouldn’t that be 4oz? I used the google unit converter and it says that 4 cups are equivalent to 946ml. Some help on this please! Thanks a lot

Hi, why are we adding the mollasses? If it is just the juice, some sugar and a bit of lemon juice, why do we need it? We allready add sugar and the juice, wouldn´t just adding a bit of lemon juice do the same? Or does it caramalize in the making of the mollasses? Does the mollasses taste much different (apart form not as sweet) than the actual grenadine? Thanks for the video in any case!

The pomegranate Molassas adds two things..a more intense pomegranate flavor and thicker mouthfeel much like adding gum Arabic to simple syrup. You can make grenadine without it but imho it turns your syrup to 11

If any barflies want to make the half-batch, I used pre-made 100% pomegrenate juice made the molasses and final grenadine with a little less two liters of juice and I still had juice and I have molasses for 1 or two other half batches. The final mixture's recipe was: 1.5 cups juice 1.5 cups sugar 1.5 OZ. Pomegrenate molasses And I put a half teaspoon of orange flower water! It turned our perfect! For the molasses just follow what Leandro said!

The molasses was fun to make, even if it takes 1½h. so you probably don't really have to loom over that stove all the time. There's something very, very satisfying in that deep red reduction, and the taste of it... Unless you're having a serious party (or are a serious alcohol/grenadine enthusiast yourself), making grenadine from a quart of juice will ruin you. The molasses will keep for several months, so perhaps a quarter recipe for home bar (1 cup of juice, 3/4 cups of sugar, 1½ oz of molasses) will do so you don't have to throw most of it away.

First of all thank you! Have you ever thought about opening another another Channel with videos from your followers all over the world? that you select before(for example)? I'm born in Brazil, spend the last 18 yers leaving in europe, and love spending my vacation in Africa or Asia and everytime I come back I do bring some treasures"" with me(like salts, spieces and oils)to show it to my staff and clientes and try new things. Every time I'm on vacation (if I find the time for it:) l see new cocktails, syrups and licores. Crazy mixs and sometimes also NOT DRINKABLE 😂 SO sure we can learn on that way even more differents drinks and so on...?!!! !shake it!

Just made my first bottle of grenadine syrup following your recipe. 👌🏽 I even made the pomegranate molasses from scratch as well.. The mess that you thought you would make .. I did exactly that. 😬 bit of a mess but luckily I did it over the sink… It could have been a lot worse. 😆 from start to finish including clean up LOL Took me about two hours… but the taste is Fantastic! In the video tell how to make the juice. Quarter a pomegranate, tap the backside of the fruit with a wood spoon to loosen the airiles. soak in water to separate the errant membrane, drain, put in blender and blend to a juice. One large pomegranate give you about 1 cup of juice. Not difficult at all.

Since it doesn't have any preservatives it should probably stay in the fridge, and should stay fresh 3-4 weeks. If you make a large batch you can freeze some and have it on hand for later!

What’s the point of making pomegranate molasses first? The grenadine is also a reduction of pomegranate juice and sugar; I’ve seen other recipes that call for just reducing pomegranate juice, sugar, and some lemon juice

Did you half the recipe for the video? Your notes don't match what you said if the video. In the notes it says "4cups (240ml)" but 4 cups is about 1000ml or 1 quart. The sugar also says 1/2 cup but should be more like 100grams for 1/2cup. Also it say 2tbsp instead of 1 as in the video. So molasses should be? 1 cup pomegranate juice 1/4 cup sugar 1tbsp lemon juice if it reduces down to 3oz, it should be about 126grams reduced www.aqua-calc.com/calculate/food-volume-to-weight ??? not trying to criticize, just want to clarify Cheers :)

FlyNRyan305 yes I halved the recipe for the grenadine but the molasses is the same if you read the notes I write out the grenadine recipe long form here they are: For Molassas 4 Cups Pomegranate juice .5 cups sugar 2 tbsp Lemon juice Put over heat and reduce to around 1/6 of it’s size for Grenadine: 4 Cups Pomegranate Juice 3 Cups Sugar 6oz Pomegranate Molasses That’s the recipe

Take pomegranate juice and sugar, reduce it, then add it to more pomegranate juice and sugar and reduce it? Seems like you're adding unnecessary extra steps there.

Dude, 10 mins of stirring. It's like watching lorries overtaking on the freeway. I can see you have some editing skills and it would not be hard to make it faster paced. If you would have shown us how to make the paste it would have been fine, but this was just stirring to me. Sorry.

Lassisn I’m still working out the process of how I want these done you’re gonna have to bear with me I’m afraid. I hate jump cuts so I’m working on a method to make them a little tighter. I always learn by doing. Apologies for the long episode but the recipe is solid

@@TheEducatedBarfly I do not know how your equipment is set up or so but in this video it would have been so easy to cut without a jumpcut. Just cut to the closeup of the pan and then you could cut to whatever you like as long as you have the audio separated. Keep up the good work, you are doing fine. But I will probably nag a bit more if I see something I don't like. 😉👍 Cheers! 🍸

I don’t really see the problem. He told you exactly how to make it and exactly how much molasses he ended up with. I do agree with the other comment though. I was waiting for a cut after a close up. But you just learned how to make grenadine at home in ten minutes so...not a big deal. This channel is always evolving and it’s one of the best out there. Also it’s cool that they own up to shortcomings. Which are hardly that at all.

Coming from a former chef and instructor at a culinary school… (i don’t claim to be all knowing but it just might help you out a little) Not sure if you’re interested for tips but you seem like a really openminded guy…. If you only cut the outer skin of the pommegranate all the way around, and break it open. It saves you some red stained splattering and…. Just keep the open side in your hand, and whack the living daylights out of the side and back with the round side of a spoon. You’ll have those seeds falling in tour palm in no time. Second: you got to have more confidence in your motor skills man. No spill on the pan to measurement cup pour, and no spill on the free pour to the bottle. (And for no stained anything from the pomegranate which is kind of Guinness world record worthy) Keep making that content i enjoy to sharpen my culinary inspiration!

From the morrocan guy in stewarding laughing his @55 off while 8 michelin-star chefs were screwing around with this common fruit. Looking back there is a valuable lesson to learn there about dropping ego and keeping an open mind.)
