500g ripe plums
40g natural salt (8% salt)
130g honey ← not too sweet
(If you want it as sweet as commercially available honey umeboshi, add 250g)
1 tablespoon shochu (edible alcohol)
[Sanbai vinegar with umeboshi]
1 tablespoon umeboshi vinegar
A small amount of soy sauce 1 teaspoon
1 teaspoon water
If you want to reduce the sourness, add 1/2 teaspoon honey
[Ume vinegar dressing]
1 tablespoon ume vinegar
1 teaspoon soy sauce
A little black pepper
1/3 teaspoon olive oil
[Ume vinegar drink]
1 tablespoon ume vinegar
1 teaspoon honey
Water or soda
