Parmesan Zucchini Squares
Ingredients:
1 large zucchini, sliced
1/2 cup onion, diced
2 tbsp dried parsley
1/2 teaspoon of salt, oregano, basil, and Italian seasoning
3/4 cup Parmesan cheese
1/2 cup mozzarella cheese, shredded (optional)
1/2 cup olive oil
1 cup Bisquick
4 eggs
Directions:
1.) Preheat oven to 350 degrees. Grease a 9x9 or 8x8 pan.
2.) In a large bowl, scramble the eggs and add the seasonings, olive oil, Bisquick, and Parmesan cheese. Add in the mozzarella cheese too if desired. Mix well by hand.
3.) Fold in the zucchini and onion.
4.) Transfer mixture to the pan and bake uncovered for 35 to 40 minutes or until golden brown.
